Yummy Vegan Treats!

Happy Weekend!

Not to brag but we have some really AWESOME weather up here for the past week. And it’s about time too! I’ve been able to get outside for walks/runs with Zac, take him to the park, the zoo, Wrentham Outlets, Mystic Village in CT…..I have been loving having some quality outdoor time! I haven’t just been outdoors though, I’ve been in the kitchen and I started working on my cookbook again! I have some fun new recipes for ya, hope you enjoy.

Vegan Coconut Flake Cookies:


1/3 cup Coconut Oil by Tropical Traditions

2/3 cup Vegan Cane Sugar

1/4 cup Coconut Milk by So Delicious

1 ts Vanilla Extract

1 1/2 cup Flour

1 ts Baking Powder

1/4 ts Baking Soda

1/8 ts Salt

1 cup Coconut Flake (I used the coconut in pic below)


Mix the wet ingredients in a bowl, then mix the dry ingredients in a separate bowl. Start pouring the wet mix into the dry mix until well combined.

Drop onto cookie sheet. Bake in pre heated 350 oven for 10 to 12 minutes.

All done!

So I thought because of my Vegan Challenge, by the way today is Day 13, that I wouldn’t be able to enjoy Cinco De Mayo….WRONG!

I made “chicken” enchiladas using Quorn chik tenders!

I used a traditional chciken and cheese enchilada recipe and just subbed the chicken with Quorn, and as you can see they came out DELISH!

I topped them with Rice cheddar cheese…MMMMMMMMMMMMMMMM

I also made Verde Cheese Enchiladas!


And last night I discovered a Vegan friendly Chinese place here in Cranston! I ordered General Tso’s Tofu and Broccoli and Miso Soup!

Now it’s time for me to ask for your help! I have received several emails regarding self image and body image issues. as women this is something most of us deal with no matter what size we are. I’m putting together a HUGE post on the subject and I’d like your input. I asked on Twitter for everyone to answer a question, and answer honestly.   • It is very cool to see someone experimenting with veganism. Though, I don’t want to come across as the “vegan police”, I did want to point out the Quorn’s products are not vegan. They are made with egg. You’ll find that many veggie “meats” are tricky like that and add milk or eggs.

    When you first start out reading labels is such a pain, but then you start to know which are ok. Some brands like Boca for instance, have one vegan burger and then the other 10 varieties are not. It is difficult to navigate sometimes.

  • I can’t wait to try those vegan flake cookies. They look so delicious! I love So Delicious coconut milk, and I think I might add a splash of the French Vanilla creamer, too.

    What is the first thing I think about my body when I look in the mirror? I think that I am not as young as I used to be!
