This post is going to start out on a serious note. I’m going to share a part of my family with all of you, and I hope that’s OK! Here goes…

As many of you know Zachary has been involved with Early Intervention for the past 2 months seeking Speech Therapy as well as Occupational Therapy. It’s no secret to any of you, or us, that Zachary had a developmental delay in several areas. Our pediatrician thought it in our best interest to seek out these therapies in hopes that it would help Zachary close the gap in these delays. While  these therapies have certainly allowed Zachary to excel in so many areas, in others he is still lacking. It is the belief of our EI team that Zachary has what they call Autism Spectrum Tendency Disorder. This is no way full blown Autism, as Zachary is still “to young” for an official Autism diagnoses. Children under the age of 4 can not be diagnosed with Autism, however it is possible with all of the research being done to pick up on the signs much earlier. Autism has quite the  bad reputation. Zachary is in NO way unemotional, he is very loving, he makes eye contact-when he wants to, and shows several other opposites of children who have been fully diagnosed with ASD. With all of that being said, we have been referred to the TOP Neurological Specialist at Hasbro Children’s Hospital in Providence. Upon completion of all needed paper work we will be seeing her and setting up further therapies for Zachary. This is treatable, he will be able to live completely normal he will just face some challenges that other kids his age may not. He is a beautiful, smart, vivacious little boy and there is not a doubt in my mind that he will be a shining star and an example of how a “disease” can be beaten!

Now onto food, fun, and Fit and Firm WINNER!!!!

For breakfast this morning I was feeling indulgent! I whipped up egg white french toast with strawberries, and a Chobani Strawberry on the side. MMMMM

Egg White French Toast:

-2 slices whole wheat Weight Watchers bread

-6 tablespoons Egg Beaters All Whites

-1 tsp cinnamon, 1 packet Stevia in the Raw

-4 strawberries sliced

Combine whites, cinnamon, and stevia in a bowl creating an egg wash for the bread. Dip each slice in the egg wash and place in hot skillet that’s coated w/cooking spray or is non stick. Cook each side until done/brown. Remove toast from skillet and serve up with strawberries!

After my yummy breakfast I was feeling the need to run. The snow had already started and I knew the gym would be closing early so I hit the neighborhood for a quick mile. It was a good run! FREEZING and bits of snow were sticking to my eyes and face, but I got my heart rate up and burned some calories. When I came in I was so pumped that I snatched my 10 pound weights and did some tricep work and then used the resistance bands for some chest and back work. Pretty nice at home work out.

Lunch was hot and spicy!

Hot Pepper Mixed Green Salad:

-2 cups mixed greens

-4 pepperoncini peppers

-1 pita warmed

-1 small green apple sliced

-1/4 cup asiago cheese

-drizzle of Balsamic vinaigrette

Combine all goodies in bowl and enjoy!

For my baking experiment this afternoon I attempted Flourless Peanut Butter Cookies. If you LOVE peanut butter these are for you, because it’s all you taste!

Flourless Peanutbutter Cookies:

-2 cups chunky peanut butter, softened in microwave

-2 cups Stevia in the Raw

-2 eggs

-Sugar in the Raw for rolling

Combine pb, eggs, and stevia in the raw in large bowl. Mix well. Form dough into little balls and roll in sugar in the raw. Place dough on cookie sheet and into pre heated 350 oven for 8 to 9 minutes. Not a fave, but not gross LOL.

Dinner was all about the hubby! Onion Chicken and Greenbean Casserole, mmmmmm!

Onion Chicken:

-6 large chicken breasts

-1 cup French’s onions, crumbled finely

-egg whites for batter

-sea salt and pepper

Place chicken in egg wash, then roll through French’s onion crumbs, top with salt and pepper. Place breasts in large casserole dish coated with cooking spray and into pre heated 400 oven for 30 minutes or until chicken is done.

Greenbean Casserole:

-2 cans greenbeans, drained and rinsed

-3/4 cup skim milk

-2 tablespoons cream of mushroom low sodium soup

-1 tsp black pepper

-French’s onion across the top

Combine beans, milk, and soup in large bowl and stir until well mixed. Pour bean mix into coated casserole dish, top with pepper and onions. Place in oven along side chicken for 20 minutes or until warm.

I added a small salad to my plate!
