If you even know me just a little bit then you know I LOVE sweets! I’m actually open to admitting it was sweets that made me fat, well sweets and laziness LOL.
So this post will be filled with yummy!
Peanut Butter Black Bean Brownies-
- 1 15oz. can black beans- drained and rinsed
- 3 eggs
- 3/4 cup brown sugar
- 1/2 cup cocoa powder
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- pinch of salt
- 3/4 cup of peanut butter (microwave for 30 seconds so it’s soft)
- 1/2 cup dark chocolate chips
First, I rinsed and drained the black beans. Then, I poured the black beans into the food processor and pulsed it until it was a creamy consistency (basically until all the beans were mashed). Next, in a large bowl, combine all dry ingredients except the chips and mix well. Moving to your wet ingredients add them into your dry and combine well. Spoon batter into 8X8 greased pan and sprinkle chips across the top. Bake in pre heated 350 oven for 25 minutes, cool and enjoy!
