Summer is here is New England and I couldn’t be more excited! This weather has me feeling so alive and ready to get back on track.
From morning runs, to afternoon walks with the family, fires in the fire pit and yummy cool drinks GGH is back and in full swing. I think Summer is the absolute BEST time to get on track with a healthy lifestyle. The sun is shining, awesome seasonal foods are available, easy to drink tons of water, and getting active outside in the sun you get good color AND burn extra calories because you’re sweating more….sounds like a no brain-er.
Check out my breakfast and lunch from today:
Super Green Smoothie
Cool and refreshing and it’s only 5 ingredients!!!
-2 cups light vanilla soy milk
-6 romaine lettuce leaves
-1 scoop Amazing Grass Orange Dreamsicle
Combine everything in your blender and blend until smooth, pour into a chilled glass for an instant energy boost!
Easy Tuna Salad
This salad is quick, low cal, low fat, and takes 2 seconds!
-1 can of tuna rinsed and drained
-1/2 of a lemon
-Mrs.Dash (about 3 shakes)
-1 cup romaine lettuce chopped
On your serving plate spread out chopped lettuce, set aside. In a small bowl combine tuna, Mrs.Dash, and the juice from your lemon and mix well. Place tuna on top of romaine, pour a nice glass of iced tea with a lemon wedge, sit back and enjoy.
Now my next little recipe I chatted about the other day and received a few messages asking if I would please post it, get your comfort food palate ready!
Mini Chicken Sliders
If you have left over chicken (I always cook up an entire pack at once) then you’ll love this as a mid week go to, and your possibilities with it are endless!
Here’s what you’ll need:
-1 can reduced fat biscuits, cook according to package
-2 cups sliced/chopped chicken
-3 slices of rice cheese cut into strips
Once biscuits are cooked and cool, slice open and spoon chicken onto bottom biscuit, add a strip of cheese, and top off with biscuit top. Repeat until desired amount of sliders are made. You could even mix BBQ sauce, Hot Sauce etc in with chicken and make a little “pulled” chicken slider.
Stay tuned for tomorrow’s post with a YUMMY Sangria recipe and outdoor work out ideas! Hope you’re ready for the return of GGH!!
