Today was a super crazy busy day! But super fun!
This morning I had to wake Zachary up….YAY! We slept in until 8:30am so nice. Then it was up and movin’. I started the morning off with an Amazing Grass shake loaded with spinach. I knew I was going to need the energy today.
-1 1/2 cups light vanilla soy milk
-1 package frozen blueberries
-2 cups fresh baby spinach
-1 heaping scoop Chocolate Amazing Grass
Combine in blender, pulse until smooth pour and enjoy.
As I sipped my liquid energy I did the dishes, started laundry, finished the Fit World Toys for Tots projects, and chased Zachary everywhere. Thank goodness his nap time came quick!
Once he went down I rewarded myself with a super hot shower and a nice big Tuna and Spinach salad!
I have anew obsession and it’s called Nasoya! I LOVE it, and I love the Dijon flavor.
Nasoya Tuna and Spinach Salad:
-1 can tuna in water, drained
-3 cups fresh baby spinach
-2 tbsps Nasoya Dijon
-sprinkle of parmesan cheese
Combine spinach, tuna, and parmesan cheese in bowl. Top with Nasoya and mix well. EAT IT UP!
All of that spinach between breakfast and lunch had me ENERGIZED! After Zac’s nap we hit the road and ran all of our errands in no time. Before it was time to take off for the Holiday Extravaganza at Fit World I made some chicken cutlets for dinner. Really easy recipe, this makes them so versatile and they can be turned into any type of dish.
Place cutlets in baking dish coated with cooking spray. Top cutlets with Mrs.Dash Italian Seasoning and a sprinkle of Tony Chachere’s for color. Bake in pre heated 375 oven for 30 to 35 minutes depending on cutlet size.
For our evening activities we attend the Toys For Tots function at Fit World!

Really fun night!
I was happy to get home and relax, and so was my Zac Attack. He was all over the place tonight and even had a visit with Santa.
Good call on pre making dinner too! I just had some of the cutlets over spinach, parmesan cheese, and topped with Nasoya!
Jam packed day, but really awesome.
