Quick and Easy Instant Pot Chili

It has been a minute since I posted a recipe here that has me as happy as this one. “Why does it make you so happy Tera?” Well, I’m so glad you asked…. 😉

I love this recipe because it involves my new friend the Instant Pot! This meal was so quick, so easy and perfect for a FREEZING SINGLE DIGIT TEMPERATURE afternoon like we are experiencing here in Rhode Island today.


What You Need:

1 to 2 pounds ground turkey (what I used today) or beef

1 onion diced (you can use frozen pre-diced if you’d like)

2 cans red kidney beans (I use these) -be sure to rinse your beans before using

1 can of Mild Rotel

1 pack of chili seasoning (I use this)

1 can of tomato paste

1 1/2 cups of water

How To Prepare:

Set your Instant Pot to saute

Add your meat of choice and onions

Brown until meat is no longer pink and onions soften a bit. Drain if desired.

Add ALL additional ingredients and gently give everything a stir.

Set the Instant Pot to Manual-Pressure High-15 minutes.

Lastly, do Natural Release

That’s it- DONE! To serve add cheese, green onions, sour cream, dollop of plain chobani…. whatever you like!

This meal is so easy, so cheap and leaves you with some delish leftovers for the next couple of meals! You can even add some cooked elbow macaroni and make chili mac for the next day, your possibilities really are endless. Now, unless you’ve been living under a rock chances are you have definitely seen the Instant Pot, especially while Christmas Shopping. And on that note if you’re wondering if all of the hype is true…. YES! Yes it is!!!
