I hope all of you are having a fantastic weekend! We have had a wonderful two days, and I have lots of fun stuff to share! So grab a soy-tastic snack and let’s GOOOOOO!
Yesterday was Day 5 on my Vegan Adventure and also my weigh in day. I weighed my self Monday morning, Day 1, and yesterday morning and I’m pleased to report a 4.6 pound loss! That’s so great and I was feelin’ pretty good. Take a look at Friday’s menu!
Toasted pita topped with Tofutti Cream Cheese! I also made a mini shake with Light Vanilla Soy Milk, 1/2 banana, 1/2 cup fresh spinach-blend and serve!
I munched on some cold eggplant and zucchinni. I wasn’t really hungry but Ya hafta eat! Especially before our little hike at Goddard State Park!
And on the way home we swung thru the Inside Scoop for some yummy sorbet! This sorbet is sooooo devine and totally vegan friendly and dairy free!
And for dinner….drum roll…….
Yes a Vegetarian/Vegan feast in a box LOL. I saw this and just had to try it. While it was a little strange and took way longer to cook than the box suggested it turned out to be tasty! The dumplings were my fave part!
The amazing Veagn Rice Krispie Treats from the other day with carob chips melted into them!
Onto today, Day 6!
Today was so awesome! The morning started out with 2 really great products arriving for me to test and chat with you all about!

Menu for today!
-1 1/2 cups light vanilla soy milk
-1 cup frozen blueberries
-1/2 cup fresh baby spinach
Blend well and drink up! This shake is the perfect pre-run fuel! Put in a grueling mile on the tready! 5.5 incline 6.5 speed…..just run!
I don’t have a pic! We went out for the day to Mystic, CT! We dined at a little spot called, prepare yourself, The Steak Loft.
Now typically, pre-Vegan advenure, I would’ve been psyched for some steak! BUT I instead had to opt for their salad bar and the only Vegan friendly items were mixed greens, cuccumbers, and olive oil for dressing. I was pretty bummed and not very enthusiastic. Everyone else was having steak, grilled chicken, fish….and there was me with the greens. Don’t get me wrong you guys know I love salad, but i would’ve much rather ordered the grilled chicken and wild rice or the steak and the baked sweet potato. I had my first “negative” Vegan experience.
Stuffed Zucchini! I have done this recipe before, and I subbed the cream cheese for Tofutti cream Cheese! I also used Panko Bread Crumbs and Vegan cheese grated over the top.
2 or 3 little bites of this is HEAVEN!
All in all pretty good past 2 days! Before I go and remind you about Shakeology ;), I wanted to post 2 pics of me and my little guy from today! I just love him and I gotta share!
