Happy Rainy Tuesday!
So is there anywhere in the USA that the weather isn’t going crazy? Snow in Texas again? Rainy and 30’s here….ok not so un-typical for here but yesterday it was 50 for goodness sake! Anyway….I’m ready for Spring! I can’t wait to plant flowers and start my veggie/herb garden. Plus, Zachary LOVES playing outside and I love playing with him, burns a lot of calories!
Speaking of burning calories…..I did a little experiment with my Polar F7 today. I wore it for 12 straight hours just to see how many calories I burned all day. I strapped it on this morning before I left for Zumba and just took it off a little while ago. I burned 2,482 calories with a 55% fat burn. I’m not sure if I’m happy or with that or not LOL. Those burned calories included: making the bed, going downstairs to start laundry, Zumba, driving, more laundry, showering, blow drying my hair, folding laundry, running errands, taking care of Zac, taking care of the hubby, making dinner, Zac shower time, Zac bedtime and more! And all I burned was 2,482 calories! Not gonna lie I really thought I burned more than that ;). But anyway, it was a good experiment and if you have one I suggest you try it out for your day!
I’ll run down my pre-Zumba breakfast, post Zumba snack and then I’ll give you my meatball recipe!
Breakfast was courtesy of my hubby! He ran out for coffee so I had my Starbucks coffee, with light vanilla soy milk, and an English muffin-egg white-and soy cheese!
Then I went and shook my money maker at Zumba….and came home to re-fuel with a quick banana!
As I munched my banana I was wishing I had some tasty granola to go with it. I have been dying to try and make my own granola so I decided to Tweet about it! I received some wonderful recipes and I will list a few below for you!
Holly’s Recipe:Measurements are never exact, I add what sounds good and then mix it up every time. (<—Note from Holly) 3 cups of oats, then add walnuts, almonds, coconut & sunflower seeds, sprinkle cinnamon & protein powder, along with 2 tbs olive oil and 4 tbs sugar free syrup. Toast in the oven.
Nicole’s Recipe: 6 cups of oats, 1 cup honey, 1 cup nuts of your choice, cinnamon, vanilla, ginger, salt-to taste. Bake 350 for 30min, stir every 5-10. Add 1 pkg berries of your choice.
Amy’s Recipe: (All amounts are approximate)
Oats — just old fashioned whole grain oats (the ones in the big tube-shaped box)
Whole, unsalted almonds
Sunflower seeds (unsalted)
Dehydrated apple slices
Fat Free Maple Syrup
Mix approx 2c oats with handfuls of other solid ingredients (to your taste). Mix 1/2c apple juice w/2tsp vanilla, 1/4c syrup and generous sprinkle of cinnamon. Bake on a cookie sheet (sprayed w/Pam) at 275 for about 10-15 minutes (till your house smells good) stirring occasionally. I store mine in a tupperware container…it is good w/milk/soymilk hot or cold. You can add whatever you want to the mix — I haven’t had a batch come out bad yet. And if you aren’t watching sugars, brown sugar makes it really good too!
Thanks ladies, I will be trying out all of these! Here’s what I came up with!
-4 cups oats
-1/2 cup coconut
-1 cup sliced almonds
-1 cup diced dehydrated fruit (I used the Target pack-plums, apricots, and apples. They were large pieces and I diced them)
-1 tsp all spice
-1 tsp vanilla
-1 tsp Stevia
-1 tsp sea salt
-1 cup Sugar Free Maple Syrup
Combine all dry ingredients in large bowl and mix. Add wet ingredients and mix until coated. Spread onto sheet pan. Bake in pre heated 350 oven for 40 mins stirring every 10 mins. Allow to cool and harden! SUPER YUM!
Allright let’s move onto the dinner recipe because it was soooooooo good!
Bison Meatballs stuffed with “Salsa”:
-1 pound ground Bison
-1 tablespoon EACH diced tomato, red onion, white onion, and 1 garlic clove: that’s the salsa part of it
-3 slices of wheat bread made into bread crumbs using food processor/blender
In large bowl combine all ingredients except for bison. Mix everything well ensuring the brad crumbs get moistened.
Then add bison, continue to mix allowing all of the flavors to meld!
Next, roll meat into 1 to 2 inch balls and place on greased sheet pan. Sprinkle balls with Sea salt and black pepper to taste.
Bake balls in pre-heated 350 oven for 30 to 35 minutes, or until done.
Slice and sautee 1 of each: red pepper, yellow pepper, and green pepper.
Stuff yummies into warmed pitas and enjoy!
