What a busy, long, hot, fun, fantastic day we had in Newport, RI! It took soooo long to get there because of beach traffic and parking was a nightmare but 2 hours later we were walking around Thames Street. It was so hot and crowded, but Zachary didn’t make a fussy noise. I can’t say enough how much he LOVES to people watch and this was the perfect spot. He clapped and laughed the whole day, excpet for when we stopped to get drinks for us and water for him, he wanted to keep truckin’. Here are some pics to enjoy!!

For dinner tonight I made Eggplant Ground Turkey Casserole.
– 2 pounds ground white turkey
– 3 large egg plant
– Italian seasonings, rosemary, parsley, salt and pepper
– 1/2 cup Sauce (your choice)
– 1/2 cup Parmesan cheese
Fully cook turkey in skillet with ALL spices listed above until cooked through and set aside. Roughly slice egg plant and saute until tender in hot skillet. Add olive oil in the middle of saute if needed. Combine cooked turkey and egg plant in large casserole dish. Top with 1/2 cup sauce of your choice, we used Ragu Old World Style, and sprinkle on Parmesan cheese. Bake in 400 dgeree oven 12 to 15 minutes to heat sauce and melt Parmesan cheese. Plate and enjoy!
