Lasagna and Chocolate

Hey Hey! It’s Tuesday!

Allright I have so much to share with you all tonight! From recipes to new products! I’m super excited so let’s dig in!

We’ll start with food, because who doesn’t love food! Today is Day 9 of my Vegan Adventure and I’m still holding strong! Check out these 2 new recipes!!

Vegan Veggie Lasagna:

Goodie List-

-2 medium zucchini sliced into thin half moons

-1 carton sliced mushrooms

-2 containers Tofutti cream cheese

-1 package Vegan Mozzarella cheese (shredded)

-1 large can tomato puree

-1 box lasagna shells (I used the no boil kind, love them)

-2 tablespoons minced garlic (use the jar, it’s easier!)

-1 1/2 cups fresh baby spinach

-sea salt, black pepper, Italian seasoning


In large skillet, coated w/cooking spray, sautee minced garlic until aromatic. Add mushrooms, zucc slices, and spinach.

Cover veggies, and allow spinach to wilt down and mushrooms/zucc slices to get soft.

Meanwhile, in large mixing bowl, combine Tofutti cream cheese and 1 cup vegan mozzarella cheese. Mix well until smooth and creamy, set aside.

Once your veggies are ready, pour enough tomato puree to cover the bottom of your lasagna pan. Place noodles on top of puree, followed by a layer of veggies, topped with a layer of cheese.

Repeat layering process ending with noodles, covering with tomato puree and sprinkling mozzarella cheese on top of everything.

Cover with foil and place in pre-heated 350 oven for 1 hour or until noodles are soft. Allow lasagna to cool and set up before plating!

All right so we just indulged in a savory dish, who wants a sweet treat?!!!

I can’t even take any credit for this recipe! I used my AMAZING Tropical Traditions Virgin Coconut Oil and found the recipe on their site!

  • This is a great recipe, and good on you for going Vegan!!! Yay!!
    Just an FYI though… Rice shreds are not Vegan, they contain CASEIN, which is a milk protein (animal product!). Casein is frequently used in “non-dairy” cheeses to create the stretchy consistency.
    Make sure to read the labels/ingredients and look for a “cheese” that specifically says VEGAN.
    I’d be happy to suggest some really good vegan cheeses if you’re interested.
