Kitchen Sink…

It’s Friday Night and I Feel Allright…..did I date myself LOL!

Today was a stay at home or go outside and freeze your pah-tu-kiss off kind of day. I really did get tons of house work done though, so I’m happy about that. All the beds were striped, sheets washed and returned to beds all clean and warm! Towels, rugs kitchen and bath washed and folded, and our laundry plus Zac’s washed, hung, folded, and put away!!!!! Wawhoo! All of my house work is done and the weekend didn’t even start. I even had time to toss in a mini work out via FIT TV! I did a nice intermediate Pilates work out that I DVR’ed a million years ago and finished off with some light weights.

AND I concocted a new soup recipe for dinner and made HOMEMADE cornbread!!!! Now that’s a day!



  • 1 cup unbleached flour
  • 1 cup cornmeal
  • 1/4 cup white sugar
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 cup plain nonfat yogurt
  • 2 eggs, beaten
  • Method-

    1. Preheat oven to 400 degrees F (200 degrees C). Lightly grease an 8×8 inch baking pan.
    2. In a large bowl, mix flour, cornmeal, sugar, soda and salt. Stir in yogurt and eggs. Do not over mix, stir only until well blended. Pour batter into prepared pan.
    3. Bake in preheated oven for 20 to 25 minutes, or until center of the bread springs back when gently pressed.

    Everything But The Kitchen Sink Soup, a la Girl Gone Healthy:

    -1 small package boneless chicken breasts, cooked and diced into chunks

    -2 large cartons chicken broth (low sodium)

    -1 large carton sliced bella mushrooms

    -4 nice sized zucchinni sliced into half moons

    -4 nice sized yellow squash sliced into half moons

    -1 can (14.5 oz) diced tomato-NOT DRAINED

    -2 large shallots sliced

    -2 cups fresh baby spinach

    -1 1/2 cups wheat pasta

    -2 TBSP Italian seasoning

    -1 tsp sea salt

    -2 tsp black pepper

    Method- (You’re gonna LOVE this)

    Since the chicken is already cooked…..DUMP EVERYTHING INTO LARGE POT!!!! Cover, allow to come to rolling boil, stir thoroughly and turn down. Continue to let soup simmer for about 20 minutes, or until pasta is tender/done. Serve up hot and enjoy!


    Can you smell it?! Soooooooo good and my hubby is not a soup fan and ate two bowls.
