King Ranch Chicken…

Today was another HOT one! It was actually warmer than yesterday! I definitely didn’t want to stay home all day so I took this as a sign to go SHOPPING! I desperately needed new sneakers so after 3 Lady Footlockers, a Foot Action, and a Champs I finally found a pair at Foot Locker Warwick Mall! As I mentioned earlier the hubby was already inquiring as to what the dinner options were and I told him I was going to go through the recipes you guys have been sending and choose one. There were so many to choose from but I was feeling the need for something easy. I ended up on an old family fave, King Ranch Chicken! Being from Texas it was instilled me in to always have a few quick and easy casserole recipes up my sleeve. You never know when a neighbor or family member might take sick or just need some help for the week. King Ranch Chicken is one of my FAVES! I don’t know why they call it Ranch though….there is not a drop of ranch in it!

Anyway, this recipe isn’t that bad for you, but of course it wouldn’t be GGH with out a modification ;).

King Ranch Chicken by Debi Bottoms, modified by GGH:’

– 1 Rotisserie Chicken

-2 cups chopped Red Onion

-1 package Wheat Tortillas

-2 cups 2% Skim Mexican Grated Cheese

-1 can Organic Cream of Mushroom, Whole Foods

-1 can Organic Cream of Chicken, Whole Foods

-1 can Chopped Green Chiles

Begin by shredding chicken and removing ALL skin. Use everything white and dark meat. Next remove ALL tortillas from package and slice into strips, set aside. In large bowl, combine shredded chicken, both cans of soup, and can of chiles MIX WELL. You want the chicken coated nicely. In large casserole dish that has been coated with cooking spray, begin layering tortilla strips until bottom of dish is covered. Pour some of the chicken mixture out onto strips and spread, like your icing a cake. Once tortillas are covered with mixture, sprinkle some of the onion on top, and then do the same with cheese. Place more tortilla strips on top and continue layering until all chicken mixture is gone. The very top layer should be tortilla strips with remaining cheese if you have it.

Bake in pre-heated 350 oven for one hour covered with foil.
