and as much as I have really started enjoying my morning runs this is not outdoor running weather. So I started to browse around for some new “indoor” work out routines and found this nice little mini boot camp from happyhealthymama.com

This work out is FANTASTIC!! It had me sweating just as much as if I had gone for my run and I didn’t even have to get out of my pj’s. Please let me know if you try it or if you have any at home work outs that you’re loving.

As I mentioned above I have been running…..imagine that ME R-U-N-N-I-N-G! To some of you it may not seem like a big deal but to me it’s a feat I thought I would NEVER conquer. Mostly because I didn’t think I could do it….ok more like I had an excuse as to why I couldn’t do it. But now I’m loving it! I just finished my second 5K a couple of weeks ago….the Gaspee Days 5K.

Hearing my finish time of 32 minutes!!! I shaved 4:30 off my time from my very first 5k in Nov 2011. Now I’m training to run my farthest distance EVER a 10 MILE road race in just 5 weeks.

The Blessing of the Fleet Road Race is a HUGE race with over 3,000 runners……because just knowing it’s 10 miles isn’t enough there has to be a gazillion people. Anyway I’m pretty nervous, excited, nervous to do it and I have been training pretty hard.

I had never run farther than 1 mile when I did my first 5k so the thought of 10 has been quite daunting. I have been building each week, this week was 4 miles 3 days a week with 2 miles on the other days. Next week will be 5 miles with 3 miles and so on. I have 5 weeks left until the race and I’m being quite realistic with myself that I’m going to have to walk and that’s OK. I’m also having to come to terms with the fact that I’m eating more, in fact I’m STARVING most of the time. it’s like all of this running has jump started my tummy.

So I thought I’d share with you one of the salads that I have been munching on quite a bit.


This salad has Morning Star Farms “chicken” strips on top…thus chicken being in””. You can certainly use actual grilled chicken, even white fish would be yummy….

For this exact salad you’ll need:

-1 serving (14 strips) of MSF chikn

-large handful of fresh baby spinach

-1 avocado peeled and sliced

-squeeze of lemon juice

Cook up your MSF chick according to package details, plate your spinach, top with heated chickn, add avocado slices and give everything a splash of lemon! This salad is perfect for lunch or dinner.

  • Congratulations on shaving off over 4 mins on your time! That’s incredible considering you just completed your first 5k a few months ago. I jumped on the 5k bandwagon one year ago in March – but a 10 miler seems almost impossible. You’re inspiring! Keep on keepin’ on!

  • 32 Minutes! ROCK ON! I just ran my first one and finished in 39:40 I am working toward a sub 30 run in the near future! Can’t wait to hear how you did on the 10 miles!
