Happy National Peanut Butter Day

We eat a loooooooooot of Peanut Butter in this house. From licking it straight off the spoon, Zac’s preferred method, to slipping some into our smoothies, to using it in lunches and dinners for sauces- we LOVE it.

http://girlgonehealthy.com/happy-national…nut-butter-day/But one of our FAVORITE ways to eat PB is via these insanely yummy flour less peanut butter cookies!

WARNING: These are really yummy and before you know it the whole plate is gone, be careful ;-).

Now onto the deliciousness….

-1 cup of chunky peanut butter (soften in the microwave about 30 seconds)

-1 cup of splenda or organic raw sugar

-1 large egg

-1 tsp of vanilla extract

In a mixing bowl combine everything but pb and mix using your mixer, everything will be a gorgeous yellow and creamy. Add in pb and continue to mix until nice and thick. Spoon onto baking sheet and place in pre heated 375 oven for around 10 minutes or until cookies are golden and firm on the outside, they should turn out fluffy looking and moist in the center. Allow to cool and devour!
