Day 72-In The Kitchen


What a day! I hit Fit World this morning for Zumba with Bernie. It was AMAZING as always. I just love that class and I love me some Bernie! If you haven’t tried Zumba you have to check it out! You don’t have to be a dancer to enjoy this hot, Latin inspired workout. You will have a blast while you learn classic Latin dance steps like the mambo and salsa. You will be shaking your hips, and burning the fat in no time! Adding weights and/or core exercise, will leave you feeling stronger, too! Soooooo fun!!!

Tonight we are going to get in the kitchen! I have some recipes to share with you guys, and I think you will love them. We will also have our second installment of Turkey Talk! I’m excited because tonight’s Talk is going to feature a recipe from a GGH reader, Elizabeth M., and some very GGH like tips from Kristeen K. I love her ideas and they have been preached by me before but maybe hearing from someone else will hit some of you differently!

Allrighty then, get the recipe cards out and let’s get in the kitchen!

Girl Gone Healthy Chinese Chicken Fingers w/ Jasmine Teriyaki Veggie Rice


-3 cups whole wheat bread crumbs ( I make homemade ones using Arnold’s Bakery Light Bread)

-1 large package chicken cutlets

-3 eggs beaten (Egg Beaters work well too)

-2 Tablespoons Five Spice seasoning

-1 bottle Teriyaki Marinade/Dipping Sauce ( I used Annie’s Naturals California Teriyaki Marinade)

-1 package Jasmine Rice

-1 package frozen Asian Blend veggies (no sauce, make sure they are plain)

-1 bag Bean Sprouts



Begin by coating cutlets in egg wash and rolling through bread crumbs. Place breaded cutlets in large casserole dish coated with EVOO, sprinkle Five Spice seasoning over cutlets. Allow cutlets to bake in pre-heated 375 oven for 35 to 40  minutes or until cutlets are cooked through and breading is golden.

While chicken is baking away, prepare rice according to package, prepare veggies according to package and set aside. (I used microwave for both) In a large skillet coated with EVOO, sautee bean sprouts until soft and browned, add in rice and veggies folding everything together. Once rice, sprouts, and veggies are mixed well pour Teriyaki sauce into skillet and continue to mix. Allow to simmer a bit, the sauce will caramelize and become sweet.

To Plate:

Dish rice veggie mixture on to plate and top with chicken strips! SOOOO GOOD!

Girl Gone Healthy Italian Grilled Cheese


-2 slices Arnold’s Bakery Light Wheat Bread

-2 slices Kraft Fat Free Cheese

-4 slices Fat Free Turkey (lunch meat)


-Italian Seasoning


In large skillet coated with EVOO: drop in one slice of bread, top withcheese, then turkey slices, then cheese and lastly second piece of bread. Allow bottom bread slice to become golden brown then flip. Once cooked side is up sprinkle Italian seasoning and allow second side to become golden. Once both sides have had face time with the skillet and cheese is melted remove from heat. Plate and add additional Italian seasoning if needed.

The Biggest Loser Season 8, episode 8: White House Salad


1 head of fresh lettuce, wash, dry and cut into bite size pieces

1 cucumber peeled, and cut into bite sized pieces

2 fresh in season tomatoes, wash and cut into bite size pieces

¼ red onion, peel and cut as thinly as possible

1 bunch fresh basil, wash and chop into big pieces

4 tbsp lemon juice

1/3 cup olive oil

1 tsp honey

Salt and pepper to taste


Combine lettuce, cucumbers, tomatoes, and onions in large mixing bowl. In sealable container, combine oil, lemon juice, honey and salt and pepper. Cover container and shake vigorously. Add dressing to salad and serve immediately.

Girl Gone Healthy Pumpkin Muffins:

1 1/2 c. STEVIA
1 c. coconut oil or 1 c. I Can’t Believe It’s Not Butter Baking Sticks-softened
3/4 c Egg Beaters Just Whites
15 oz can organic pumpkin pie mix
1 1/2 c. wheat flour
1 1/2 tsp. soda
1 1/2 tsp. all spice
1 1/2 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
Measure all ingredients in a big mixing bowl. Beat together well for 5 minutes. Pour into cupcake pans (fill more than 1/2 full). Bake at 400 degrees for 18 minutes.

Healthy Sweet Potato Casserole by Elizabeth M.

  • 2 1/2 pounds sweet potatoes, (3 medium), peeled and cut into 2-inch chunks
  • 2 large eggs
  • 1 tablespoon canola oil
  • 1 tablespoon honey
  • 1/2 cup low-fat milk
  • 2 teaspoons freshly grated orange zest
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt


  • 1/2 cup whole-wheat flour
  • 1/3 cup packed brown sugar
  • 4 teaspoons frozen orange juice concentrate
  • 1 tablespoon canola oil
  • 1 tablespoon butter, melted
  • 1/2 cup chopped pecans



  1. Place sweet potatoes in a large saucepan and cover with water. Bring to a boil. Cover and cook over medium heat until tender, 10 to 15 minutes. Drain well and return to the pan. Mash with a potato masher. Measure out 3 cups. (Reserve any extra for another use.)
  2. Preheat oven to 350°F. Coat an 8-inch-square (or similar 2-quart) baking dish with cooking spray.
  3. Whisk eggs, oil and honey in a medium bowl. Add mashed sweet potato and mix well. Stir in milk, orange zest, vanilla and salt. Spread the mixture in the prepared baking dish.
  4. To prepare topping: Mix flour, brown sugar, orange juice concentrate, oil and butter in a small bowl. Blend with a fork or your fingertips until crumbly. Stir in pecans. Sprinkle over the casserole.
  5. Bake the casserole until heated through and the top is lightly browned, 35 to 45 minutes.

Our Turkey Day time saver/ life saver tips are from Kristeen K., enjoy!

For the past Thanksgivings in order to save time  I just buy a turkey at Boston Market. I prefer making the sides since there are so many to make anyway! Who needs the bird to cause extra stress?
Also, to help save some calories, try to spoon out 2 regular spoonfuls of the sides and have more white turkey meat (san turkey skin). That way you can still have a taste of all the sides but not overstuff yourself. The two spoon rule also goes for dessert!
After you have had your meal, brush your teeth so you know that you have finished your meal and it may help you curb your urge to eat since you may not want to brush your teeth again or eat food that mixes with your toothpaste! YUCK.
