So let me catch you up on life…..
Last night was a quickly thrown together date night for the hub and I. I have been dying to try Kon Asian Bistro and finally convinced him to go. OMGosh friends, BEST meal ever. We sat at the Hibachi grill and had the best chef ever. He was so entertaining and gave us Sake shots all night. He chopped up veggies and tossed them at us, the hubby was the only one to catch them out of the 4 of us that went. To start we shared Spicy Tuna Rolls and my fave Philly Rolls…..AMAZING. I have eaten sushi from every coast and even in NYC where it’s supposed to be incredible (and it is) but I’m sorry guys little ol East Greenwich, RI has got it goin on in the sushi department. For my hibachi combo I enjoyed the steak and scallops which were not only cooked right in front of me, but were cooked perfectly. The hub hates steak, I know weired right, but he ate half of mine. It was so delish. Go check them out! Oh and we shared a huge Scorpion Bowl and it was on FIRE!!!!
So after a very full belly and a tad buzz from Sake shots and a shared Scorpion Bowl I slept like a baby. And then 7am came and my little sunshine alarm clock, AKA Zachary, woke me up to start the day! We had a nice quiet breakfast together. We both had Oatmeal and fruit! Then I cuddled with him and watched a DVR’ed Charlie & Lola until it was time to get ready for Spin with Lea at Fit World.
Ahhhhh (that’s not a scream that’s a sigh) Fit World. How I love walking into a CLEAN, non sweat smelling facility. I gladly run my key tag past the scanner and I’m greeted so warmly by Walter. He hands me my Spin pass and says “enjoy”. Oh I will Walter, I will :). This was my third Spin class and probably the most intense. We really went hard today and I loved it. So I’m gonna end tonight’s post with a recipe for you all! This is super easy and what I like to call “man food”.
Cheesy Chili Mac: (yet another recipe to feed the masses)
-1 box Wheat Pasta (I used rotini)
-2 bags Morning Star Farms Beef Crumbles
-1 block Rice Cheese Cheddar flavor cubed (the melting block, not slices)
-1 onion diced
-1 15oz can tomatoes
-1 8 oz can tomato sauce
-1 can tomato paste (small can)
-1 package Chili seasoning (any brand will do)
Start by cooking pasta according to box directions, drain and set aside. Saute onions until tender and add frozen beef crumbles. Allow onions and beef to cook until beef is warmed through out. Next, add all tomato ingredients and chili seasoning package, stir everything together and allow mixture to thicken. Combine meat and pasta stirring together, place entire mixture in large casserole dish. Place cheese cubes through out mixture, cover with foil and allow to bake in pre-heated 350 oven for about 20 minutes or until cheese is completely melted. YUM!
