Day 58-My Inner Latina

Well Hello!

I’m back and hopefully SPAM free! I’m not talking meat in the can either! I’m talking Internet creeps trying to send spam mail via GGH and leaving disgusting spam comments. But hopefully thanks to 3 days worth of tech work this won’t happen anymore.

Now onto more important business…..How is your Challenge going? You guys have been super quiet, did you all quit on me? I have heard from some of you and I’m pleased to report that I’ve seen some great numbers 2 weeks in. Keep up the great work, the Holidays will be here before we know it.

This morning I went to ZUMBA at Fit World with Bernie. I absolutely ADORE that class. It was a super full class today and we had every age, size, and even some boys in class with us. Bernie is so much fun and makes even the most uncoordinated dancers feel comfortable. One of the Latina ladies that was in class told me afterwards that she “loved watching me in the mirror”. I laughed and said “oh it must be a great show”, and she said “Yes actually it is”. I was really laughing then,  and she said “oh no I just meant you really get into it and embrace your inner Latina”. My first thought was, ooooo I’m spicy LOL. I thought that was such a compliment. I have been dancing since I could walk and I have always loved watching Ballroom and Latin dancing. I was a traditional dancer: ballet, tap, lyrical, jazz, and hip hop so it’s super fun to do something new. If you have never tried Zumba before you should definetly put it on your list of things to try. If you are a Fit World member please join me next week.

The other day, before GGH went down, I asked for you guys to send in some yummy recipes that you consider old faves. The few I received sound super delish, so I want to share them with you. Please feel free to send in more and I will post them. If you ever try out any recipes posted and tweak them to your liking a little, I would love for you to send in your new and improved version too. As always, I am posting the recipes as YOU send them in. That’s why I encourage you to tweak them yourselves, if you see something that looks yummy and you’d like a GGH spin on it let me know and I will jazz it up for you.


Mini Pizzas by Michael Ann Bryant
BBQ Chicken
Whole wheat English muffins or flat bread
BBQ sauce
grilled chicken
part skim mozzarella cheese

Whole wheat English muffins or flat bread
tomato sauce
turkey pepperoni
part skim mozzarella cheese
Bake at 350 for 10 minutes.

Heart Attack Casserole by Kelly Simmons ( This sounds to die for and could easily be GGH’ed)

3 cups frozed french-style green beans, thawed
1 can (10 3/4 oz reduced-fat reduced-sodium condensed cream of chicken soup, undiluted
1-1/2 cups frozen corn, thawed
1 can (8 oz) sliced water chestnuts, chopped
1 medium onion, chopped
1/2 cup reduced-fat sour cream
1/4 cup cubed reduced-fat Velveeta cheese
5 tsp reduced-fat butter
1/3 cup crushed Ritz crackers
2 Tbsp slivered almonds
In a large bowl, combine the first seven ingredients. Transfer to an 11 X 7-in baking dish coated with cooking spray. In a small skillet, melt butter. Add cracker crumbs and almonds; cook and stir until lightly browned. Sprinkle over the top.
Bake, uncovered, at 350 degrees for 35-40 mins or until heated through and topping is golden brown.
Quorn Roast w/Apples, Sweet Potatoes and Carrots by Amy Kuiawa
1 Quorn roast (Thawed)
2 apples
2 sweet potatoes
3 carrots cut in 1″ chunks
2/3 c. Apple juice
1 tsp.Basil
1/2 tsp. Cinnamon
Salt & Pepper
2 tbsp EVOO
Combine Quorn roast, salt/pepper, oil, basil and cinnamon in a ziploc bag. Shake until the roast is covered.
Put Quorn roast into baking dish surrounded by the rest of the ingredients.
Cover with foil
Cook at 375 for 1 hour, turning roast halfway through.
When you remove it from the oven, let it sit covered for a few minutes — makes the roast moister (I hate that word)
Sleepy Momma Crockpot Goodness by Amy Kuiawa
1 bag Quorn fake chicken tenders
1 can cream of broccoli soup
1 vegetable bullion cube
1/2 bag frozen blackeyed peas (I used Trader Joes)
1/2 bag frozen peas
1/2 tsp. cinnamon (Trust me)
3/4 cup water
Combine all in crock pot and cook on low for 4-6 hours.
I served mine over wild rice (the easy steam in bag kind from Trader Joes)
Creamy, warm goodness on cold Fall nights!
