Day 16, Lot’s To Write

Hello…..this is me super tired!

How was everyone’s day today? From those of you that I heard from, looks like it was good one. I was little Miss Journalist today. The magazine that I free lance for commandeered me to write a Fall article that was based on recipes with apples! I came up with an “entree” and a dessert. They were both really tasty that I’m going to dedicate this evenings post to them and share the recipes with GGH Nation before the article even goes to print! I also finally scanned my other article on Autocrat Coffee Syrup that I had written for their Rhode Island Icon series! Super exciting to open a magazine and see your name in the by line. I’m a nerd I know ;).

So here we go….2 awesome Apple Dishes! The entree is totally GGH but dessert is definitely a cheat worthy splurge or great for an up coming special occasion. Enjoy!!!

Apple Chicken Gorgonzola Pita “Pizza’s”:

You Will Need-

-1 package small chicken cutlets

-6 small apples sliced into thin wedges (your choice any will do)

-tsp each dried oregano, parsley, rosemary, and sea salt

-small pita pockets

-crumbled Gorgonzola cheese

-fresh baby spinach


Place chicken cutlets into casserole dish that has been well coated with cooking spray; sprinkle chicken with sea salt and all dried spices ensuring that each piece is covered; place apple wedges amongst cutlets. In pre heated 375 oven, cook chicken and apple wedges for 40 minutes or until chicken is done and golden.

To assemble “pizza’s” place pita pockets on work space layering with baby spinach first, followed by chicken cutlet pieces (generally 2 pieces of chicken per pita), third layer will be you roasted apples, and lastly top the pita pizza with Gorgonzola cheese crumbles.



Apple Turnovers:

You Will Need-

-2 cans crescent rolls

-2 small apples sliced into wedges

-1 tsp cinnamon

-1 tsp sugar

-1 tsp vanilla extract

-whipped topping



Start by coating casserole dish with butter flavored cooking spray; taking your crescent roll dough-un roll into the pre cut triangles; place apple slices on to triangle and begin rolling (1 to 3 slices per crescent triangle depending on thickness of apple slice); you should place the slices on the wide end of the triangle and roll your dough and slice towards the point; once rolled place turn over into casserole dish seam side down; continue rolling until all dough is used. Once your dish is full sprinkle cinnamon and sugar over the top and bake in pre heated 375 oven for 17 minutes or until turn over’s are golden and puffy. While turn over’s are cooling mix vanilla extract into whipped topping, mixing well. Upon cooling plate your turn over’s and garnish with vanilla whipped topping and walnuts.


There ya go dinner and dessert!
