Chicken,Salsa, and Sangria

Last night’s dinner was one of those spur of the moment, clean out the fridge, I have no idea what I want, type of meals that turned into the BEST dinner EVER and all for 270 calories!

I know it’s supposed to be “Wordless Wednesday” in blog land but if you know me “wordless” isn’t in my vocab……;)

So here ya go:



Chicken & Salsa:

-1 package chicken breasts (boneless skinless and I cook the whole thing so I can portion out for future meals)

-1 pita (I use Arnold’s 8 grain for a whopping 100 calories for the ENTIRE pita)


-Chunky salsa (your choice, I had Market Pantry/Target brand in the fridge-10 cals per tablespoon)

In a saute pan cook up your chicken using the Mrs.Dash as your seasoning, set aside once done. Toast your pita and cut into “chips”, scoop up your salsa ( I used about 3 tablespoons give or take) and plate it along side 3 ounces of sliced chicken breast. And enjoy! So filling so tasty so easy!

I also promised you a sangria recipe!!! So here we go!

GGH Sangria:

1 (750-ml) bottle red wine

1/4 cup orange liqueur, such as Triple Sec

4 to 6 strawberries sliced thin

1 orange or 1 lemon sliced thin (could use both)

2 cups Sprite ZERO or Diet Sprite

More sliced citrus fruit, for garnish


1. Combine the wine, orange liqueur, and fruit slices in a large pitcher. Stir, and store in the refrigerator for at least 4 hours (or overnight).

2. To serve, strain out the soaked fruit if desired. Pour the chilled diet soda into the pitcher, and stir to combine with the wine.

3. Serve over ice, and garnish with fresh sliced fruit.

This is INSANE!!! And so low cal!!!
