As Girl Gone Healthy I have often assumed the role of “Cheerleader”. In fact I often tell people that if they need a cheerleader I’d be happy to oblige, I love it.

Cheerleader it’s not often that someone in my PERSONAL life asks me to be their cheerleader, but I couldn’t be happier that this wonderful lady has done just that.

This is my Mother In Law and I couldn’t be more proud of the journey she is about to embark on, and I am THRILLED to be her Cheerleader! Five years ago we lost my Father In Law to Stage IV Brain Cancer. It was a whirlwind and he was diagnosed and then gone within 9 months. My Mother In Law was his whole world, he honestly did EVERYTHING for her and losing him she certainly lost a piece of herself. Like many who have lost a loved one and are grieving she didn’t take care of herself, she didn’t care and she “let herself go”.

But that attitude is a thing of the past because she has now made the decision to embark on a Weight Loss Journey! She feels ready and realizes that she still has so much to live for and live a HEALTHY life for. She has had success on Weight Watchers in the past and to show her my full support I have joined WW with her!




I’m looking forward to this journey and to sharing my experience with WW including fun new recipes! If you caught my post from the other day featuring my yummy Tortilla Soup that’s only 3 points plus per serving then you’ll love this Mexican Casserole for 7 points plus as well.

Girl Gone Healthy’s Mexican Casserole

Mexican Casserole:’ll Need:

1 package lean ground turkey

1 package frozen Recipe Ready by Bird’s Eye red, yellow, green peppers w/onions

1 small bag fiesta blend cheese

1 box Ortega white corn taco shells (break taco shells in half)

1 packet taco seasoning

Method: Cook turkey until brown and cooked through, mix in taco seasoning according to directions and ensure turkey is coated set aside. In additional skillet saute peppers and onion mix until veggies are crisp. Mix turkey and veggies together. In a 13×9 baking dish coated with cooking spray you will layer halved taco shells. (you can see in the picture the pattern I used to layer) Place 6 taco shells on the bottom of pan, top with turkey and veggie mix, top with cheese. Continue with layering until all ingredients are used, make sure cheese is your top layer. Place baking dish in pre-heated 350 oven and bake uncovered for 15 minutes or until cheese is melted and bubbly.

Each serving is 7 points plus, this pan makes 9 servings if cut like this.
