For the first time in my life someone told me I was sexy, and it wasn’t my husband. It was a guy who is very much a tell it like it is not gonna Bull Sh*t you kind of guy, and I have to admit I was speechless and a little embarrassed.

You see I’ve always been the funny one, the loud one, the boss, the leader, the such a pretty face girl……never the sexy girl. As a matter of fact I’ve put weight on over the past year, according to the scale, but as I sit and reflect I’ve also been teaching for a year now, lifting 4 to 5 times a week -doing an insane amount of crunches so I know it’s not all fat. I guess I’ve been extremely hard on myself lately and I see myself completely differently then other people see me. I’ve also been told this week that I’m beautiful and very well put together-WOW. This is by no means a bragging post, believe me, this is a post for everyone who has lost a large amount of weight and is on a plateau, for everyone who is losing weight and feels like no one notices, it’s even for those who don’t need to lose weight but feel plain-ugly-to skinny etc….we are our own worst critics, ALWAYS!

Make it a point to tell someone they’re beautiful this week, tell that friend/neighbor/co-worker/family member that you’ve noticed their weight loss and to keep it up, tell your son or daughter that they’re amazing and beautiful, tell your husband/boyfriend that he’s handsome, tell your wife/girlfriend that she’s beautiful or better yet Stunning….make it a point, you know how great it feels when someone tells you so spread the joy!

So since your goal for the weekend is to be sweet, how bout a sweet treat?!

Sugarless Pancakes:


(This recipe makes quite a few cakes so cut in half to serve 1 or 2 people. You could also add dark chocolate chips or carob chips and use a waffle iron!)

-2 Organic eggs

-2 cups Light Soy Milk, flavored is OK to use

-2 tsp Vanilla Extract

-2 cups Wheat Flour or Coconut Flour

-3 tsp Baking Powder

-1/2 tsp salt

Beat eggs, milk, and vanilla together. Combine remaining goodies and stir into batter, just until smooth. DO NOT over mix, some lumps are OK. Heat non-stick skillet or pancake griddle to medium high heat and spray with butter flavored cooking spray. Ladle pancake batter onto cooking surface or into skillet and allow to cook until top of pancake is very bubbly, then flip and cook until pancake is golden and moves easily with out running.
