Baja Anyone?

Sorry I have been absent this week, but I have been keeping my Achieve in August promise by being SUPER ACTIVE!

We have done family bike ride every night this week, I did Zumba Wednesday night, ran 3’s this morning (I’ll explain in a minute), and even went back to the gym tonight for 30 minutes on the elliptical. I feel INCREDIBLE!! For those of you who like running and want an easy interval change up 3’s are for you!

GGH 3’s:

-Warm up at a steady pace for 5 minutes

-Set the treadmill at a speed that actually makes you work! Run hard for 3 minutes and then break at a slower pace for 2 minutes. Repeat the 3 on 2 off 5 to 6 times!

Quick, easy, and get’s this job done!

Here are some fun bike ride pics too!

We are really enjoying this little bit of active family time!

Now let’s move onto some food!!!

Since the hubby loves spicy, Mexican, Latin based foods and I was craving something fresh I decided a trip to Baja, California would be ideal ;).

Baja Wraps:

-1 package chicken cutlets marinaded in Baja spiced marinade (see below)

-1 can black beans (drained and rinsed)

-1 medium white onion diced

-2 tablespoons minced garlic (use the jar king 😉 )

-LaTortilla Factory low carb tortillas

-fat free sour cream

-3 ears of corn grilled/blackened then taken off the cob

*** Baja Marinade***

-tsp each red chilli flake, sea salt, black pepper, garlic powder, orange zest, and cumin

-1 tablespoon each lemon juice, lime juice, orange juice

Allow chicken to get yummy in marinade in the fridge for at least 30 minutes.

Once chicken is marinaded throw it on the grill with the corn at medium heat for about 15 to 20 minutes (turning chicken half way through)

While the chicken and corn are grilling away, saute your diced onion and minced garlic until soft. Once soft add in can of black beans and turn heat down. Mix well and allow beans to get warm. Lastly, mix in the grilled corn and stir well.

To assemble the wraps lay your tortillas on a flat surface and spread with a little bit of sour cream. Then add bean/onion/corn mixture and top with chicken. (shred chicken with fingers so the wrap rolls nicely) Roll your wrap burrito style, cut down the middle and enjoy!

As a side dish I made a yummy California Salad!

-3 pickling cuccumbers washed and sliced

-2 plum tomatoes sliced

-2 avocados sliced

-Extra Virgin Olive Oil for drizzling

-Sea salt and black pepper to taste

-1/2 of a lemon’s juice

In a large bowl combine cukes and tomato, drizzle with EVOO and squeeze lemon over the top. Toss everything gently and top with salt and pepper. Add avocado slices around the side and serve.

Hope everyone has a wonderful, healthy, active weekend! Remember to Achieve in August-new month, new goals, new you!!
