Back To Reality…

Thank goodness I had such a great night’s sleep and little man decided to sleep until 8:30am this morning because it was back to reality.

I started the morning off running errands and then coming home to clean and do laundry from our trip. Pretty boring but it has to be done! In between laundry trips and Swiffering I fueled up with a nice bowl of Low Sugar Quaker Oats-Maple Brown Sugar and washed it down with a huge bottle of water flavored with Crystal Light!

I love oatmeal! It’s so filling and comforting.

With a full afternoon ahead of us, Zachary had a doctor’s appointment, I went ahead and made tonight’s dinner! I made a variation of an old fave, Fiesta Bake! I love meals like this because they’re quick and make great left overs! Recipe and goodie list below!

Fiesta Bake:

-2 pounds ground bison (beef, chicken, or turkey will do fine too)

-1/2 cup corn

-1/2 cup red bell pepper diced

-1/2 cup black beans

-1/2 cup onion diced

-1 package Taco seasoning

-1 tsp chili flakes

-1 tablespoon garlic, minced

-cooking spray

-1 can reduced fat crescent rolls

-1 cup Mexican 2%  grated cheese

-fat free sour cream, optional

In large skillet coated with cooking spray, cook bison until done. Add in onion, peppers, corn, beans, garlic, and chili flakes and continue cooking. Once veggies are soft, add Taco seasoning according to package directions. Let mix simmer and thicken.

Once mixture is thick, pour into 9×13 casserole dish and top with crescent rolls. Bake in pre-heated 375 oven for 15 to 18 minutes, or until crescent rolls are golden. (Picture of crescent placement is below. Just unroll, roll out into triangels and place across dish)

Allow to cool, then serve up! Garnish with cheese and sour cream if desired!

The hubby plated his up so nice I used his bowl for my pic!

Yummy! So nice to bake that off this afternoon, let it cool, fridge it and then whip it out tonight. Plus it will make great lunches/snacks for the hubby through the weekend.

I think I will go for a run on the antique tready down stairs before I fold the laundry and watch the very late Celtics game tonight! I hope everyone had a great day! Check out the reminders below! Goodnight.
