I was so pleased to see that phrase ALL day today. Monday doesn’t have to be blah if you don’t want it to be! Yea for everyone catching on!!
Today was a busy day, but a fun day! My morning started by running that deadly interval at the gym with Angela….you know the one I mentioned last week where I called my self Flash LOL. It wasn’t nearly as hard being the 3rd time around. So I think I’ll be ready to move from the 30 minute to the 40 minute session. Wait did I just say that out loud? Oh great now I HAVE to do it ;). Not only did I work on my fitness but I got my tan on too! I love laying in that bed all warm and cozy while the wind howls outside and the temperature is a “warm” 25 degrees. That 10 minutes of warmth is the best cat nap ever!
After the rigorous intervals I came home and made a SHAKE!!!!!! Thanks to my lovely friend and GGH’er Amy K! She had 2 extra containers of the Pom Mango Amazing Meal and I snagged them from her!! SOOOOOOO HAPPY!!!
Post Work Out Energizer:
-1 scoop Amazing Meal
-2 cups fresh baby spinach
-1/2 cup sliced strawberries
-1 1/2 cups Vanilla Light Silk Soy Milk
Combine in blender, blend until smooth, pour and devour!!!
As I devoured that delicious cup of goodness I checked my emails, started laundry, chased Zachary around the house ( I LOVE playing chase with him, he’s a quick little buggah) and made him some lunch. Once he was napping I whipped a little snackie snack!
This is one of my new faves for sure: Creamy Chicken Quesadillas
I took some left over chicken breasts, shredded it into bite sized pieces, smeared some fat free cream cheese on 2 tortillas, sprinkled chicken pieces onto one side of the tortilla and topped with some mixed baby greens, placed the other tortilla on top, cut into 4’s and oh man!
Then this afternoon Zac and I ran out to pick up dinner goodies and some new sneaks for me!!! I went my gazillionth pair of the Nike Women’s Dart VII, best running shoe I’ve owned! Plus the pink makes me sassy ;).
Allright on to dinner!
Tonight I made Turkey Loaf!!! It turned out sooooooo good!!
Girl Gone Healthy Turkey Loaf-
-2 lbs ground Turkey
-1 meatloaf seasoning package
-1 small onion rough sliced
-2 cups green onions rough sliced
-1/4 cup Panko bread crumbs
-3/4 cup water
-1 tbsp minced garlic
Combine egg, water, onion, green onion, meatloaf seasoning packet, and garlic in food processor/blender and pulse until onion is chopped and everything is blended. In large bowl combine liquid mix with turkey and bread crumbs-use your hands and combine everything together. Place mix in large casserole dish or large loaf pan coated with cooking spray, place in pre heated 350 oven for 1 hour or until cooked through.
I paired my turkey loaf with steamed asparagus and a nice salad (mixed field greens) topped with Pomegranate Vinaigrette and Parmesan cheese sprinkles!!

On to my special project. As you may know I have been approached to do a cook book with all of my GGH recipes and I want all of YOU to get in on the fun! I have received so many recipes from everyone, and I love it, that I think we need to share them with the rest of the world. A large portion of the cook book proceeds will go towards GBM research in my Father In Law’s name. GBM is the type of Brain Cancer Tumor that he has, and their is a definite need for more answers in regards to unlocking the mysteries around this type of tumor. The cook books will be reasonably priced and of course be helping a great cause. Please send any and all of your favorite HEALTHY recipes for snacks, dinners, breakfasts, desserts, lunches, cocktails WHATEVER to firstname.lastname@example.org. I would really like to get this up and running again ASAP! So gather up all of your faves and send them in by March 1st, 2010! Your name will go along with your recipe so it will be fun to have your name published! I look forward to seeing what you guys send in and seeing how much money we can raise for this effort!
