Today is Day 1 of my 30 Days of Vegan challenge. I wanted to do this 1 to prove to myself that I could absolutely do anything I put my mind to, and 2 prove to people that you can absolutely do anything you put your mind to. And let me just say, I applaud all of you Vegans who live this 24/7/365. Here are my goodies from Whole Foods that will get me thru week 1!
I did all right today but I really missed my mid afternoon Chobani with granola on top. That is usually my saving grace, the granola is heaven and the protein packed Chobani fills me up. However, I did thoroughly enjoy my yummy So Delicious Coconut yogurt!!!
Here’s what Day 1’s menu looked like!
1 1/2 cups Light Vanilla Soy Milk
3/4 cups strawberries
3/4 cups blueberries
2 cups fresh baby spinach
6 to 8 ice cubes
Blend and serve!
Sauteed-red/yellow/green pepper strips, 2 large zucchinni, 1 large fennel. Used EVOO to sautee, and seasoned with 1/4 tsp sea salt. black pepper, garlic powder, basil, and oregano. Plated over fresh baby spinach and gave it a drizzle of Balsamic Vinaigrette. I made a huge pan of this and set aside unused portion for dinner!
1/4 cup So Delicious Coconut Vanilla Yogurt with a handful of strawberries and blueberries
1 box farfalle pasta (I used Whole Foods Organic)
1 cup Tomato Puree
1 container of mushrooms, sliced
Left over veggies from lunch
Cook pasta to liking, set aside. In large skillet sautee mushrooms until brown. Add in left over veggies and continue to warm. Pour tomato puree over veggies and allow to simmer and thicken. Mix veggies and pasta. Serve warm!
And for dessert……
Dear Lord are these wonderful or what?!!! I LOVE So Delicious products, Vegan or not! I want to live on Turtle Mountain!
So as you can see Day 1 wasn’t that bad and I enjoyed some DELISH food! Plus I tried new things like fennel! It is so tasty, I recommend cooking with it ASAP!
I’m looking forward to tomorrow! I feel really good and so far I’m not missing anything except my granola bars!
