Zucchini Roll-A-Tini

If you’re on Facebook then you’ve probably seen a video or two by TASTY. You know the cute super quick cooking videos that range from healthy breakfast ideas to desserts that makes you gain 20 pounds just watching them assemble it, yea those.

Well a few days ago my news feed was overloaded with tons of different TASTY videos featuring zucchini inspired dishes and that inspired me to come up with a little something myself.

Meet Zucchini Roll-A-Tini

-3 large zucchini

-1 small container ricotta cheese

-1 medium-sized can of tomatoes

-1 small can tomato sauce

-1 onion chopped

-1/4 cup minced garlic

-2 cups grated mozzarella cheese (1 cup for top)

-2 cups shredded Parmesan (1 cup for top)

-13×9 baking dish lightly coated with cooking spray

Assemble/Prepare:

Start by washing and drying your zucchini. Then using a veggie peeler cut your zucchini into thick ribbons, run your peeler down the zucchini so the strips are long. If you don’t have a veggie peeler that will do this then use a sharp knife and create your strips. Once done, set aside.

In a small sauce pan, warm your tomatoes, garlic and onion, stirring until well mixed. Allow to simmer just a bit and remove from heat, set aside.

Pre-Heat oven to 350

In a mixing bowl, combine your ricotta cheese and 1 cup of shredded Parmesan and 1 cup of mozzarella, mix well and set aside.

Now for the FUN part!! Lay your zucchini strips out on a large work surface and begin spooning your ricotta cheese mixture onto the strips. Feel free to smooth it out/spread it out running the length of the strip. You will then roll your zucchini strips up making little zucchini “balls” if you will. Place your zucchini rolls into your 13×9 baking dish and continue assembling until all strips are used. ** If you feel that your strips are to thin, use more than one strip/layer them to give a little more weight and continue directions as stated.**

Once your rolls are assembled and in your baking dish, spaced a part as needed, pour your tomato sauce over the top coating all of your rolls. Place in a pre-heated 350 degree oven, covered with foil, for 30-35 minutes. Remove from oven, remove foil and use remaining cheese to sprinkle over the top of the entire pan. Turn oven to BROIL and place pan under heat allowing cheese to bubble and brown, about 5/10 minutes keeping an eye so as not to burn, and remove from heat once cheese has become golden and bubbly.

Allow pan to cool and cheese to set for a few moments and then ENJOY!
