What A Day…

Hello GGH World!

I hope that all of you are happy it’s Friday! I didn’t even realize it was until about noon, LOL. Today was one of those days where I accomplished absolutely NOTHING on my To Do List but somehow managed to accomplish tons of other stuff. For those of you inquiring on an update in regards to my Father In law, here’s a quickie:

He will be released from the hospital tomorrow, and he and my mother in law will be moving in with my mother in law’s sister Christine. I really feel this will be wonderful for him as both my mom in law and Christine are nurses. They will also be calling in Hospice for additional help. From here on out we will just be keeping him comfortable and with those two lovelies on the job he will be way more than comfortable. I ask that you continue your prayers and please include strength for my Father In Law’s two angels. It is not going to be an easy task, and my mom in law is very brave to take this on. Thank you all so much for the lovely cards, emails, and messages they mean a lot.

Since this is such a trying time on all of us I decided to make the hubby’s fave dinner! Bison Tacos! He is offically obsessed with these delicious little treats. I will post the recipe below just in case you’re a first time GGH’er!

Goodie List:

-2 one pound packages Rancher Ground Buffalo

-1 package Taco seasoning

-1 box Organic Blue Corn Taco Shells

– 1/2 cup chopped onion

-1/2 cup diced tomato

-Sea Salt and Black Pepper to taste

First cook Buffalo just like you would beef, nice hot skillet coated with cooking spray-making sure meat is cooked until brown through out. Once all redness is cooked out, add tomato and onion mixing both into the Buffalo mixture letting the get warm, once onion and tomato have softened add Taco seasoning according to package and in corporate through entire skillet. Let mixture simmer for a bit continuously stirring to make sure everything is seasoned. Add your salt and pepper in for an extra flavor kick. While Buffalo mix is warming, place taco shells onto a baking sheet and place in pre-heated 425 oven for 2 minutes to get them crispy. Remove shells from oven and stuff with meat mix, top with cheese and place back in oven until cheese is melted. Plate…..and CHOW DOWN!

They really are sooooooo good. As Ryan says “Buffalo is the new beef”.

I’m so looking forward to Yoga tomorrow at Fit World with Gary. I really need to relax and let go! Now if I could just get a pedicure I think I’d be all set ;).
