Weekend Update

Hey there!

What an absolutely gorgeous week and weekend we had here in New England! Sorry I didn’t post much but I was out and about enjoying it. This was the first week that the high was out of the 50’s! People didn’t know what to do with themselves.

Tonight’s post is just going to be a quick food update, some awesome new products that I’ve been blessed to try out, and some fun pics. I have to get into bed early tonight because tomorrow is Zachary’s first day of pre preschool! We went for orientation today and he did wonderful! It was so neat being able to check everything out and explore before his first actual day! I’m really excited for him to start tomorrow and play with the other kids. Allright let’s talk food! I’ve been eating some random meals lately, not sure why and they might not even seem random to you LOL.

Steak and Egg Whites:

I love these little mini sandwich steaks and when I’m feeling meaty this makes a great breakfast! I just scrambled up 2 egg whites, pan sauteed the steaks and topped everything with Italian seasoning!

Blueberry Muffins:

 

 

 

 

 

1 1/2 c. PureVia
1 c. I Can’t Believe It’s Not Butter Baking Sticks-softened
3/4 c Egg Beaters Just Whites
2 c. No Sugar Added Applesauce
2 c. Blueberries (i used frozen that were thawed to room temp)
1 1/2 c. wheat flour
1 1/2 tsp. baking soda
1 1/2 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
Measure all ingredients in a big mixing bowl. Beat together well for 5 minutes. Pour into cupcake pans (fill more than 1/2 full). Bake at 400 degrees for 18 minutes.
Classic Tuna Melt:
-1 can tuna in WATER, drained
-1 pinch sea salt
-1 pinch oregano
-1 pinch black pepper
-1 small blob of low fat mayo-just enough to moisten tuna
-2 slices WW wheat bread toasted
-1 slice Rice cheese, cheddar flavor
Mix a tuna, mayo, and seasonings in bowl. Place cheese on toasted bread and allow it to melt, top with tuna and enjoy!
Trader Joe’s Chile Lime Chicken Burger:
 
 
 
 
 
 
 
 
 
 
 
 
 
-1 Trader Joe’s Chile Lime Chicken patty cooked until warm
-2 slices Carb Style bread
-smear of honey dijon mustard
-1 slice of rice cheese, cheddar
Assemble sammie!
Turkey Tacos with Chile Salsa:

-1 lb pound ground white turkey

-box corn taco shells

-3 medium sized roma tomatoes

-2% Mexican cheese

-2 tablespoons minced garlic

-1/2 jar salsa, your choice I used green chile & roasted tomato

In large skillet coated with cooking spray begin to brown the turkey. Once the turkey is cooked through, pour in salsa along with all other goodies listed, and combine with turkey. Allow turkey mix to simmer until thick. When ready fill taco shells with turkey, top with cheese, and pop into pre heated 350 oven to melt cheese! Serve hot!

Seafood Buffet:

 

 

 

 

 

 

 

Stuffed salmon patty from Trader Joe’s and 1 large piece of White Ruffy baked! Top ruffy with I Can’t Believe It’s Not Butter spray, lemon juice, sea salt, black pepper, and a dash of parsley-bake at 375 for 20 minutes or until done.

SNACK TIME!!!!!

I tried another Peeled Snacks flavor this afternoon! Apricot-A-Lot!

These little life savers came in the mail today! They are stress relievers, and Lord knows I need some of that! They smell amazing, all minty and delish and I plan on using them tonight! I will let you know how incredibly relaxed I am tomorrow!
