Happy end of week 1!!! Our challenge is officially on now. The easiest part is pledging and getting really excited, the true works come in sticking to it -making changes-and seeing results. After losing 100 pounds I still struggle with this last bit of weight. And when I say bit I actually mean chunk LOL. I’ve even chatted with my doctor about it, and gone over my family/personal history, and I have to come to terms with my body not being able to drop 40 more pounds. I have to face the realization that I will most likely be able to lose another 20 to 25 pounds and manage to be healthy. This is where our minds come into play.
Everyone is different and no two bodies are a like. What works for me might not work for you and vice versa. Some people lose tons of weight very easily and others have to understand that their bodies are slower. That’s OK! You continue to worry about YOU because those pounds won’t melt while you stress over what others are losing. This is also why I tell you guys to stay OFF the scale except for weigh in day. If you weigh mid week and you’re down 3 pounds, you’re most likely going to indulge a bit and then poof your up a pound. OR you hop on and you’re up 2 pounds, you feel defeated so you binge and that 2 pounds turns into 5. Am I right? I know I am because I’ve done it. Please ladies, weigh in once a week at whatever time you choose and stay off the rest of the days. Continue drinking that water, I know you’re living in the bathroom-me too, but it will flush your system, provide energy, and your skin will thank you.

Onto the food!!!
I was quite snackie this weekend, so it was all about quick easy little meals! AKA salads and fruit!! Here are the 2 I loved the most!
California Mash Up:
-2 roma tomatoes
-1/2 red onion
-2 small avocados
-1 slice of rice cheese shredded
-Extra Virgin Olive Oil (EVOO)
-Sea Salt and Black Pepper
Dice/chop all veggies, drizzle with EVOO and toss. Sprinkle with cheese and season with salt/pepper to taste.
-2 handfuls Romaine lettuce
-small handful of grapes
-Balsamic for drizzling
-toasted english muffin for crunch
Combine romaine, feta, and grapes in bowl-drizzle with Balsamic. I actually crumble my english muffin over my salad in place of croutons!
I also obsessed over this breafast Friday, Saturday, and Sunday….MMMM

When we began (9/6/10)-163.6 pounds
Today (9/13/10) 161.4 pounds
Total Loss-2.2 pounds
Yay! My goal for this week is to really kick up the water in take!! We should be taking in 64 to 128 ounces a day! I’m struggling for 64 so my goal is to hit 96 ounces a day! I’d also like to lose around the same amount of weight!
