Wednesday, You Were Pretty Cool

Hump Day!

Today was such a great day! Zachary and I were up at 7:15AM and getting things done! Our kitchen is put back together for the most part so I wasted no time in getting some serious cleaning done. My whole house smelled of bleach and pumpkins by 9AM. LOL

After cleaning like a mad woman, I rewarded myself with a super yummy, warm, and delish breakfast: Gingerbread Chai Latte and a nice bowl of Apple Cinnamon Oatmeal.

To make Gingerbread Chai:

Brew cup of Chai Tea according to directions, or personal preference. Add in a splash of Coffee Mate Gingerbread creamer, stir well and allow tea to settle. I personally like to leave the Chai tea bag in the cup so it can steep while the creamer settles, YUMMY! The creamer is only 45 calories and the Chai is ZERO! What a great low cal morning pick me up.

After my little breakfast bliss was over it was time to pack up the boys and head out for the afternoon. As much as I hate to admit it, we began Christmas shopping today. Only for Zachary though, need those Santa gifts in order ;). It was so crowded everywhere we went and I could not for the life of me figure out why. It dawned me in the gigantic Toys R Us line that it was a Holiday and everyone else had the same idea. So Happy Veteran’s Day and I’m glad everyone else decided to thank them by stimulating the economy ;).

All of that shopping made me hungry and we were conveniently by Chipotle!! I love love love Chipotle!

The hub and I decided to share the Vegetarian Bowl and nibble on some tortilla chips and fresh salsa, OUTRAGEOUS!

So tasty!

With full bellies, and a little man who wanted to run around and play, we headed home. I decided to take the day off from Fit World today, my calf is in some serious pain, but the hub met up with his buddies and put in a good bicep/tricep work out!

I hate not going, but this is one of those times where I have to listen to my body. My calf  has been bothering me for a few days now and I have just kept going strong, but I had an obvious limp today while we were shopping, so I thought an off day would be acceptable.

Let’s talk FOOD!

Since I received and posted the awesome Stuffed Mushroom recipe from www.skinnyandthecity.com the other day, I have been craving them. I decided that tonight they would serve as my side dish and that I would make an amped up version for the hubby. On the GGH plate tonight:

Baked Panko Chicken, Skinny Shrooms, and Double Stuffed Mushrooms:

Panko Chicken:

– Chicken Cutlets

– 1 1/2 cups Japanese Panko bread crumbs

– EVOO

-Cooking Spray

Begin by coating cutlets in EVOO and rolling through bread crumbs, making a coating. Arrange cutlets in large cooking spary coated casserole dish, and drizzle with additional EVOO. Allow cutlets to bake in pre-heated 375 oven for 30 to 35 minutes, or until chicken is done and crumbs are golden.

Double Stuffed Mushrooms:

– 1 package Stuffing Mushrooms, cleaned and stems removed-clean mushroom cap out to prepare for stuffing

– 1 large Onion diced

– 1/4 cup Panko Bread Crumbs

– 1/4 cup chopped Scallion

-EVOO

– 1 small jar of mushrooms chopped finely

-Parmesan cheese

In large skillet sautee diced onion until soft and translucent. Add in chopped scallion, finely chopped mushrooms, and bread crumbs. Coat entire mixture with EVOO and continue to work around the pan until mixture thickens. Once thick, begin stuffing mushrooms using a regular sized spoon for scooping/stuffing. Place stuffed mushrooms in baking dish, top with a sprinkle of Parmesan cheese, and allow mushrooms to bake in pre-heated 375 oven for 15 to 18 minutes. Tops of mushrooms should be golden and crisped.

Total Time: 15 minutes

Serves: 3

Ingredients:

  • 12 whole fresh white button mushrooms
  • 6 ounces fat-free cream cheese
  • 3 scallions, finely chopped

Instructions:

  1. Mix cream cheese with the scallions and set mixture aside.
  2. Remove the mushroom stems, wash, and dry well.
  3. Stuff the cream cheese and scallions into the cavity of the mushrooms.
  4. Broil in the oven for 10 minutes and enjoy!

AWESOME DINNER!

Now I’m in the mood for dessert! So Turkey Talk tonight will be a dessert recipe!

This particular dessert is on the high end of calories per serving, so it would have to be your ONE dessert choice. Really quite tasty though!!

Low Fat Cranberry-Apple Crisp: by Fiona Haynes

Goodies:

  • 2 large Granny Smith apples, peeled, cored and chopped into 1-inch pieces
  • 8 ounces fresh cranberries, washed and picked through
  • 2 tbsp lemon juice
  • 1/2 cup unsweetened apple juice or apple cider
  • 1/2 cup rolled oats
  • 1/2 cup firmly packed brown sugar
  • 1/4 cup whole-wheat flour
  • 2 tbsp butter, cut into tiny pieces

Method:

Preheat oven to 400 degrees.

Placed sliced apples and cranberries in an 8×8 inch glass baking dish. Drizzle with lemon juice.

Pour all but 2 tbsp of apple juice over sliced apples and cranberries.

Whisk oats, brown sugar and flour together. Rub butter pieces into oat mixture. Sprinkle on top of apples. Drizzle remaining apple juice.

Bake for 35-40 minutes, until golden and bubbly.

Serves 4-6

Per Serving: Calories 245, Calories from Fat 29, Total Fat 3.2g (sat 1.5g), Cholesterol 5mg, Sodium 40mg, Carbohydrate 50.7g, Fiber 5.1g, Protein 3.1g
