Tofu Adventures

Hello!

Sorry I didn’t post about yesterday’s Day 2 Vegan Adventure, but I got all emotionally wrapped up in Biggest Loser. So I’ll do day 2 and today which is obviously Day 3!

Here we go!

Day 2 Menu:

Breakfast-

1 1/2 cups Light Vanilla Soy Milk

1/4 cup EACH strawberries, blueberries, banana

1 1/2 cups fresh baby spinach (or 2 nice handfuls)

6 to 8 ice cubes

Blend well, pour and you have breakfast on the go! Zac had school yesterday morning so this was perfect to sip on the way!

Lunch-

I was craving more berries! I complimented them with a scoop of So Delicious Coconut Yogurt and munched on warmed pita and a spoonful of artichoke spinach hummus.

Dinner-

I was on my own, because the hubby had a late class. This is 1 LARGE eggplant, sliced into strips. Place on baking sheet and drizzle EVOO over the top, sprinkle with Panko breadcrumbs and Italian seasoning. Bake in pre heated 375 oven until eggplant is softened and bread crumbs are golden. I placed these over fresh baby spinach and it was delish!

Dessert-

Day 3, Today’s Menu!

Breakfast-

1 1/2 cups Light Vanilla Soy Milk

2 cups fresh baby spinach

3/4 cup strawberries

6 to 8 ice cubes

Blend well, and enjoy!

Lunch-

This was left overs from my Veggie Pasta from the other night, so yummy!

Dinner-

Here we go…..this is my adventure with TOFU!

I sliced these lovely blocks of soy into large cubes. I used 1 block from Whole Foods and 1 block from Trader Joe’s (pictured on the RT), I have to say I will always buy my tofu from Trader Joe’s! It was firmer, and not near as runny. It didn’t skeeve me out like the Whole Food’s block.

I then sauteed 2 large red peppers (sliced) along with sliced mushrooms in EVOO. Once my veggies were done I removed them from the skillet, and then sauteed the tofu cubes. Once the tofu began to brown I added the veggies back in and drizzled everything LIGHTLY with Balsamic Vinegar, and sprinkled everything with Herbes De Provence!

I did a little more shopping today too! As you noticed I had mentioned Trader Joe’s tofu….and I found some other Vegan goodies too!

Can’t wait to try the “beef” strips over my mixed greens and the “cream cheese” on toasted pita! And the chocolate bar, well i just wanted to know if they made Vegan “candy bars” and they do! I’ll let you know how it tastes when I sample it.

But I didn’t just eat and food shop, I hot the gym hard today! I did a 5K run/walk, but mostly run and it felt really good. I was a sweaty mess and I loved it. I had the whole day with my Zac Attack too, and of course that’s always the best! And as if having Vegan Rice Krispies for dessert was enough of a delicious treat, I was informed that I have been chosen to be a Foodbuzz Health Contributing Editor!!!!!!! YAYYYY!!!! I am so excited and this new section will launch May 1st! This is really going to be an amazing resource for foodies who are HEALTHY! I will keep you updated as to the launch details!

So tomorrow is Day 4 in my adventure and I’m feeling pretty good! I feel really light and my skin feels amazing. Zac has school in the morning so I think I shall turn in early! I hope you all have a Terrific Thursday!
