Tacos + Nachos Make Tachos

This is quite possibly the EASIEST dinner I’ve made in a while – SERIOUSLY. In fact I’m going to show you how to make our new favorite, TACHOS (Taco + Nacho = Tacho), in 10 easy steps and you only need 6 ingredients.

What You’ll Need:

9×13 pan coated w/cooking spray, foil for covering, large mixing bowl and mixing spoon, can opener

1 bag frozen diced chicken breast

1 box of taco shells (any shells will work)

sour cream

1 can of Rotel drained (use hot, mild, original, Mexican style etc. we use original so its kid friendly)

1 can of black beans rinsed and drained thoroughly

1 package of shredded Mexican cheese

What To Do:

Pre-heat your oven to 350 and allow to heat while you assemble

Using your large mixing bowl you are going to combine the diced chicken, Rotel, and beans – mix well, set aside.

*Don’t worry about chicken being frozen, it will warm up in the next steps*

5.) Grab your coated 9×13 pan and break up your taco shells allowing them to act as a base.

6.) Spoon some of your chicken/veggie mixture on top of the shells, sprinkle shredded cheese on top.

7.) Continue layering the same way (shells, chicken/veggie, cheese) until all mixture is used and ensuring that your top layer will be shells, also be sure to leave enough cheese for melting on top at the end.

8.) Cover your pan with foil and place in your 350 oven for 30-35 minutes depending on oven.

9.) Remove pan from oven and pull foil off, sprinkle remaining cheese on top and place back into the oven, uncovered, until cheese is melted.

10.) Remove pan from oven and get ready to eat!

Spoon servings on to plates, top with sour cream, add a sprig of cilantro if you have it, and ENJOY!
