Super Muffins

In honor of National Running Day I wanted to post a quick, easy, low cal recipe that certainly helped me curb my sweet tooth while training for Saturday’s race.

These are an old fave and I’ll warn you now, it has 2 slightly controversial ingredients but said ingredients allow this recipe to be so low cal! You can swap them for whatever you like but I like that it helps each muffin be a mere 34 calories!!! (and quick)

GGH Super Muffins:

-1 box spice cake mix (170 calories)

-12 ounces DIET root beer (0 calories)

-Raisins ( I only had individual snack boxes-6 of them-540 calories)

-1 cup shredded carrots (match stick size 70 cals)

-1 cup shredded zucchini (match stick size 19 calories)

Total Calories: 799 divided by 24 muffins- 34 calories

Mix all ingredients in a large mixing bowl, stir until completely blended. Spoon batter into muffin tins or cup cake liners and bake for 18-20 minutes at 350.

Please let me know if you try this recipe and you wont taste the zucchini at all ;).

Tune in tomorrow as I re-cap my training runs for my 5K on Saturday! I’m so excited to run the Gaspee Days 5k, this will be my second 5K ever!!

    Absolutely omit anything you like and you could always grind the carrots to small bits in the food processor and “hide” them! I have also just used zuccs with this recipe and it turned out fine. Let me know how it goes

  2. I think this recipe could work for my PICKY boys but I need your opinion on some substitutions. :)
    I’m not a good baker at all. I second guess everything so I’d love your help. My boys would never eat the raisins (can I omit them totally?) & there is no way I could get away with the carrots showing like that. I’m thinking of doing 2 cups of zucchini instead….would that work? FYI-My zucchini is grated & frozen from last years garden, so it’s not “matchstick”.
    So, could this turn out?? I’m looking for recipes that are low cal but still good tasting to them. Thanks for the help! :)
