In honor of National Running Day I wanted to post a quick, easy, low cal recipe that certainly helped me curb my sweet tooth while training for Saturday’s race.
These are an old fave and I’ll warn you now, it has 2 slightly controversial ingredients but said ingredients allow this recipe to be so low cal! You can swap them for whatever you like but I like that it helps each muffin be a mere 34 calories!!! (and quick)
GGH Super Muffins:
-1 box spice cake mix (170 calories)
-12 ounces DIET root beer (0 calories)
-Raisins ( I only had individual snack boxes-6 of them-540 calories)
-1 cup shredded carrots (match stick size 70 cals)
-1 cup shredded zucchini (match stick size 19 calories)
Total Calories: 799 divided by 24 muffins- 34 calories
Mix all ingredients in a large mixing bowl, stir until completely blended. Spoon batter into muffin tins or cup cake liners and bake for 18-20 minutes at 350.
Please let me know if you try this recipe and you wont taste the zucchini at all ;).
