The sun finally came out around 5:30pm today!!! It was so funny people were squinting and glaring at it in anger. I guess we have become used to the gloom, so sad.
Anyhow, Zachary and I hit up Trader Joe’s to re-stock the must have Chicken Patties and avocados. I love it in there!! The music is cooky and the people are AWESOME! Zachary enjoys shopping there too, plus the girls flirt with him LOL.
After TJ’s we came home and Zachary played in the back yard a little bit, but it was mostly wet and squishy so it didn’t last long. After the little guy went to bed I began concocting mine and Ryan’s din-din. I came up with Spicy Chicken Wraps.
Here is the goodie list: (serves 2)
-2 boneless skinless chicken breast
-1 packet Taco Seasoning
-4 wheat wraps
-2 % Mexican cheese blend
-avocado, as much or as little as you like
First put the Taco seasoning over the chicken and let it sit in the fridge for about 30 minutes, once marinaded place chicken breasts in large skillet coated with cooking spray, cook thoroughly, if you find the chicken to be drying a little add a touch of water to the skillet as needed, once chicken is done remove from heat and cut into chunks, spread avocado on wheat wrap, top with chicken and the a sprinkle of cheese, roll up-slice and VOILA! Spicy Chicken Wrap, DELISH!!!
I did attempt the modified Zucchini Cake and we think it’s DELISH! However, it was a touch mushy because I made it completely Vegan. I am going to try in one last time with less yogurt and a larger pan. The mascarpone frosting is to die for though…..Oh My Goodness….mmmmm.
So that was our night, lot’s of cooking and baking. I love being in the kitchen with Ryan, he does a lot of snacking but it’s still fun :). I’m going to try and hit the hay early tonight and pray that it’s not raining in the morning so Zac and I can hit the park for miles.
