Tonight I would like to touch on a few things that when it comes to our health many of us overlook. When you hear the words healthy some of the following images may come to mind:
Typical images right? Eating healthy and exercise, the normal things you hear to provide yourself with a better life. But what about our mental health? The way we feel deep down inside, or when we look in the mirror, when you are laying in bed at night with millions of thoughts running through your head. With the Holidays just days away it’s important to stop a minute and focus on what we should truly be Thankful for…family, friends, and your health if you have it! Be thankful for the gift of sharing these special days with the people you love. Be sure to tell your loved one’s how much they mean to you often, not just on holidays. When you see images like the one’s below it warms your heart, let’s make it a goal to feel that way all of the time.

So you’re probably wondering why I’m writing on this subject tonight, right? I have received an over flow of emails regarding seeing certain family members during the holidays and the overwhelming stress it’s causing. So what’s the #1 thing most of us do when feeling anxious, overwhelmed, or stressed….E-A-T! I have said it a million times……STRESS EATER, RIGHT HERE!
It’s so easy to comfort ourselves with a pint of Ben and Jerry’s, a bag of potato chips or maybe you’re a sweet and savory combo type and you crumble the chips into the Ben and Jerry’s. I’m here to tell you to put the carton down, the feeling you will have after plugging all of that into your body so isn’t worth it. Whomever this person is that you’re dreading seeing……you have to get over it! I’m speaking from experience. I recently “had it out” with a very close family member and I have to tell you the weight that was lifted, for me personally, after hashing it out was a way better feeling than any cake/chips/ice cream could ever do. I don’t have to walk on egg shells anymore or worry if they will be popping over to a family member’s house when I’m there. Whatever it is the person in the wrong has done needs to be talked about and forgiven if that’s possible. Holding grudges and negativity in your heart is so damaging. You could work out 7 days a week, eat perfectly, and lose tons of weight…..but if you have anger/hurt/sadness that yoiu’re carrying around all of that working out and eating right is for nothing. Again, speaking from experience….you don’t look great if you don’t feel great. Research has found that feeling angry for long periods of time may cause health hazards like lowering of the immune functions as well as the urge to pick up habits like smoking and drinking. So i urge you to pick up the phone, hash it out, apologize, move on and look to the future. Girl Gone Healthy is all about second chances, starting over, and taking it one day at a time. This post was pretty heavy and I know somewhere out there someone is reading this and they needed to hear it. I was that person and pride is a hard pill to swallow, but once it’s down it’s the best medicine in the world.
You guys requested more side dish alternatives, so I shall deliver. What about brown rice instead of mashed potatoes?! This isn’t your mom’s brown rice either!!! Give it a shot!
Lemon Asparagus Brown Rice:
- 1 tbsp olive oil
- 1 tbsp (unsalted) butter
- 1 cup sliced mushrooms
- 2 tsp minced garlic
- 1 tsp onion powder
- 1 cup short-grain brown rice
- 1/4 cup lemon juice, room temperature
- 1 tsp grated lime or lemon zest
- 1 tsp grated fresh ginger
- 2 1/4 cups chicken broth
- 1 1/2 cups asparagus in chunks
- 1/2 cup grated Parmesan cheese
Heat olive oil and butter over medium high heat in a skillet. Add mushrooms to skillet and cook about 3 minutes until browned. Add garlic and onion powder to mushrooms then cook 1 minute. Add brown rice to mushroom and garlic mixture; cook until browned, about 5 minutes. To rice mixture, carefully pour in lemon juice; add lime zest and ginger. Cook until most of lemon juice evaporates, about 2 minutes. Carefully add chicken broth; bring to a boil. Once boiling, reduce heat to medium-low, cover, and simmer 45 minutes. Meanwhile, place asparagus in a steamer basket and steam for 5-8 minutes. (Asparagus should be bright green.) Remove rice from heat, and add asparagus and Parmesan cheese. Toss rice until cheese is melted and asparagus is incorporated.
Ginger Sweet Potato Muffins:
- 1/2 cup salted butter
- 3/4 cup brown sugar, firmly packed
- 2 large eggs
- 3/4 cup mashed sweet potatoes
- 1 teaspoon freshly grated ginger root
- 1 1/3 cups all purpose flour
- 1/4 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground allspice
- 1/2 cup coconut milk
- 1/2 cup minced crystallized ginger
Preheat oven to 350 degrees and spray 12 muffin tins with nonstick spray. Place butter and sugar in a mixing bowl and beat at high speed with an electric mixer for 30 seconds. Add eggs and continue to beat until mixture is very fluffy. Add mashed sweet potatoes and grated ginger root and beat at medium until blended. Sift flour, baking soda, baking powder, salt, cinnamon, nutmeg and allspice together. Fold in half of flour mixture. Stir in coconut milk. Fold in remaining flour mixture and crystallized ginger. The batter should be smooth, but be careful to not over mix. Fill prepared tins halfway with batter. Bake until muffins are golden brown and a toothpick inserted into center of a muffin comes out clean, about 25 minutes. Transfer muffin tins to a wire rack and cool for 10 minutes before removing muffins.
Put those out and watch them fly off the table!
