If you Follow me on Twitter then you know I’ve been cooking up some new yummy dinner dishes! I thought I’d bring that yummy here so that my non-Twitter friends could share in the fun!

Buffalo Turkey Whole Wheat Pita Pizza

1 lb ground turkey

2 tablespoons Frank’s Hot Sauce

4 Whole wheat pitas

Bleu Cheese crumbles

In a skillet coated with cooking spray brown the ground turkey. Once cooked add hot sauce and allow turkey to simmer and thicken. Meanwhile, set oven to broil and place pitas directly on rack and let them crisp up. Remove pitas from oven, top with turkey and cheese crumbles, place on cooking sheet and back in oven allowing cheese to melt. Serve warm, serves 4 people (1 pita a piece).

Shrimp Stir Fry

1 package mini frozen shrimp thawed

2 bags of frozen mixed veggies (your choice) I used microwaveable steam bags

1 medium onion sliced and sauteed

1 tablespoon teriyaki sauce

Cook veggies according to package directions, set aside. In large skillet combine sauteed onion and shrimp, cook until shrimp are warm and add teriyaki-stir well. Add veggies and combine. Serve warm!

Lemon Poppy Seed Chicken with Herbes De Provence Roasted Beans

2 nice sized boneless chicken breast

4 tablespoons Reduced Fat Lemon Poppy Seed vinaigrette

1  15 oz can cannellini beans drained, rinsed, and patted dry

Extra Virgin Olive Oil

pinch of sea salt

3 tablespoons Herbes De Provence

In casserole dish coated with cooking spray place chicken breast and drizzle Poppy Seed vinaigrette over the top. Set aside.

In mixing bowl, combine beans, drizzle of EVOO, salt, and herbs-stir well. Spread beans out in a dish coated with cooking spray. Sprinkle a little more of the herbs on top if you’d like.

Place both dishes in a pre heated 425 oven and allow to cook for 10 minutes. Turn heat down to 400 and cook both for an additional 25 to 30 minutes or until chicken is done and juicy! Serve along side a mixed green salad!

Now for dessert!!!

Flourless Peanut Butter Cookies

1 cup peanut butter softened

1 cup Splenda, Sugar, Truvia your choice

1 egg

1 tsp vanilla extract

In mixing bowl combine sugar, egg, and vanilla beat until creamy. Add in peanut butter and mix until crumbly. Spoon on to cookie sheet and bake at 375 for 10 to 12 minutes. Serve warm!

  1. That Buffalo Turkey Pita Pizza looks good! I’ve been craving buffalo foods recently (so random!), so I’m going to have to try that.

    Also, the Lemon Poppyseed chicken looks good. I’ve been wondering what to do with my Herbes de Provence! Do you think I could whip up some Lemon Poppyseed vinaigrette?
