Pilates! & Egg Rolls

So at the gym this morning I took Pilates Pump……AWESOME! With everything that has been going on with our family I needed a stress reliever and this class hit the spot. Lori, the instructor, was so great. I love it when instrcutor’s make it a point to remember your name and use it during class to cheer you on. As a former dancer/instructor this girl was spot on! The music was fun, the cardio was just enough, the actual Pilates was great for all levels because she showed ways to modify the pose….it was just all around exactly what the doctor ordered. I’m really looking forward to taking a few more classes, they have some great Power Yoga and Zumba!!! I have been wanting to try Zumba for a while now. I hear it’s great for dancers!! It was an hour long class and a total body workout. I was sweaty and exhausted…..just like I like it :).

After the gym I plowed down a Greek Yogurt w/some GGH granola by Mix My Granola! I also went through a gigantic bottle of water :).

Now I’m just running around doing laundry and trying to hurry because we want to go out and enjoy the sun! I’m so looking forward to doing something with the boys today, it’s been a while!

Below is the Healthy Chinese Egg Rolls from Miss Cara! I know I promised this last night, but we went to see Ryan’s father and also had the chance to visit with Aunt Karen (huge GGH fan), Uncle Jack, and Lindsey! It was a really nice visit, and it was filled with delicious pastries that served as up close and personal Food Porn LOL. How I wanted a Lemon Square….mmmmm…..but I behaved and indulged in an Irish Cream Bailey’s on the rocks instead. I hope all of you have a Wonderful Wednesday! Cara’s Egg Rolls:

(These can be frozen and baked when you’re ready and are awesome for parties)

1 package egg roll wrappers

1  package firm tofu (you can use chicken or beef if you don’t want to do it
vegetarian)

1 cup mushrooms, diced

1 cup snow peas, chopped

1 cup carrots, shredded

1 cup cabbage, chopped

1/2 cup onion, finely chopped

2 cups of finely chopped celery

1/4 cup  low-sodium soy sauce (or a little more for taste..but not too much or it
gets watery)

1/2 tsp. ginger
2 tbsp garlic powder or one finely chopped garlic clove

1 egg beaten
cooking spray
1tsp of canola oil

Directions-


Heat canola oil in a large skillet and brown the tofu/meat
Add
cabbage first, then a few minutes later once the cabbage is about
half-cooked add the carrots and snow peas, and mushrooms (in that
order)
Sprinkle the garlic powder over everything and then the
celery and onion. Add the soy sauce. Stir the mixture around to make
sure the soy sauce gets on everything for a while, until vegetables are
tender

If you would rather use garlic powder than real garlic cloves, that is
fine. Substitute 2 tablespoons of powder for the cloves. Add the garlic
seasoning to the skillet. Now add the celery and red onion. Finally add
the soy sauce. Stir around the mixture. Cook this on med-high for 15
minutes. Add the ginger and stir fry for about 5 minutes longer
You can dissolve a little cornstarch in water and brush it on the inside of the
wrapper if you like, it can help it stick

Take one egg roll wrapper and place about 1/4 cup of the cabbage
mixture into
it. Fold up the corner facing you onto the cabbage. Fold in the left
and right corners toward the center and continue rolling the wrapper.
Spray them with cooking spray and place on a sprayed cookie sheet. Bake
them at 350 until the wrapper is golden brown.

BEST Pilates Move! It’s a great lengthening stretch and it really works everything if done correctly!
