Ole!

The other night I was really craving Mexican food…..ok what’s new I’m always craving Mexican food LOL. Thank goodness I married someone who loves it as much as I do or I wouldn’t be allowed in the kitchen ;).

I was tired of the same ol taco burrito song and dance and came up with Mexican Stir Fry! It was so quick, so cheap, and so DELISH! Check it out.

Mexican Stir Fry:

-3 boneless skinless chicken breasts cubed

-1 package microwave steamable Southwestern style corn and black beans (I use the Target Archer Farms brand)

-1 package Taco seasoning

In a large skillet saute chicken until done, follow the directions on your seasoning packet and then pour over chicken. Turn heat down and allow to simmer. Once thickened pour into serving bowl.

Set aside. In the mean time pop your Southwest mix into the microwave for time directed (mine was 7 minutes).

Once heated through, combine with chicken and mix well. Serve warm!!

I ate mine straight up and the hubby enjoyed his on a Flat Out wrap. It was so tasty, full of fiber, and made for a great left over lunch the next day.

So unless you live under a rock it’s no secret that awesome New England (she said with sarcasm) is definitely not in full swing Spring :(.

However we did have a couple of “nice” days and Zac was able to enjoy the trampoline we bought for his 3rd birthday!!! Have a look!

So fun! And a great work out jumping up and down holding a 32 pound kid ;). Zac is really making progress and that makes me so happy. His speech is coming along and it’s so strange and wonderful to hear him.
