Leftovers Are Your Friend

Let me set the scene……

It’s dinner time you don’t feel like cooking and you’re standing in front of the fridge staring at a sea of half full Tupperware containers. (Side Note: It’s my movie so the fridge is GORGEOUS!!! LOL)

In a perfect world the containers would be filled with healthy left overs….so let’s pretend that this “movie” is set in a perfect world. As you stare blankly at all of the containers trying to remember when you cooked what, and if you even liked it the first time around, your hunger dissipates and you shut the door only to not eat or order take out.

Sound familiar? Of course it does because we have all done it. But you can change those boring left overs into entirely different meals. I know it may sound like extra work, and sometimes it is, but when you actually have the time to cook-make extra. When I make chicken for dinner I always make a huge package of it and season it fairly mildly so I can portion out the extras and turn them into something different. We all know how to cut up cold chicken and put it over salad but that’s boring! How about turning them into festive quesadillas with a package of Taco seasoning, can of green chillies, wheat tortillas and cheese-BANG new meal! Or a GGH fave-HASH! You can take left over chicken, ground turkey/beef and roast up some yummy veggies and then toss everything together with some EVOO sprinkle your fave seasoning over the top and BANG new meal. The possibilities are endless you just have to try and be creative. I honestly plan our meals for the week, no really I do. I always have at least 4 to 5 week night meals planned out and they usually turn into left overs a la lunch the next day. We do wraps, salads, quesadillas, or just re heat the exact same meal. And I throw everything out after 1 to 2 days. I find if it’s not staring at me I don’t get bored and it allows me to create new dishes. So let’s do something fun! Here are a couple GGH recipes that were inspired by left overs!!

Chicken & Veggie “hash”:

– 4 left over chicken breasts,  cooked and sliced into strips
– 2 Yellow Squash
– 2 Roma Tomatoes
– 1 bag fresh baby spinach
– 2 pinches Sea Salt
– 2 pinches Black Cracked Pepper
– Olive Oil for drizzling
– 1/2 bottle Roasted Garlic Marinade

Chop all veggies and combine in large roasting pan, add salt/pepper, drizzle liberally with Olive Oil, pop into 350 pre-heated oven. Roast off for about 20- 25 minutes.

Meanwhile in large skillet combine chicken and marinade, cook on medium until chicken is nice and warmed. Remember it’s pre-cooked so you just need to heat it!!

After veggies are nice and roasted and your spinach is good and wilted, pour chicken into roasting dish and stir everything together, pop back into oven for about 10 minutes allowing the marinade to get all over those veggies!!

Pull out, plate it and eat up!!! We enjoyed a nice glass of Pinot Grigio along side!!

Left Over Idea for Chicken & Veggie “hash”:

– 2 cups left over Chicken & Veggie “hash”
– 2 Wheat tortillas
– 1 cup 2% Mexican Cheese

Micro left overs for 1 min. 30 seconds, use cooking spray for your skillet twice around, place one wheat tortilla down into skillet, dump all Chick/Veggie mix on top of tortilla, sprinkle with cheese, place second tortilla on top. Let cook for a couple of minutes and then flip it allowing the other side to get golden.

Cut and enjoy!!
