I’m Back, and with Breakfast!

It’s been a few days, but my last post was so HUGE that I hope it sufficed. I’m so happy to receive so many emails in regards to people networking and learning about fun, healthy new products and sites. That’s exactly why I did it. I will try do one of those each month, and I invite you guys to share what you love and I will add it right in.

Let’s play catch up! I took Saturday off from the gym, but we had major kitchen construction going on so I was running around liek a chicken with my head cut off. Plus I took advantage of being “stuck” in the house to do ALL of the laundry, strip beds, and pack up some things to put away that will not be appearing in the new kitchen. AND I re-introduced an old fave snack into my line up!

We took it easy on Saturday night, I think I just needed to stop and re-charge. Little to much on the plate and I wasn’t listening to my body. I felt MUCH better when I woke up on Sunday morning so I decided that going to Kickboxing would be the icing on the cake! It was a full house and a kick butt class! I did an hour of Kickboxing and a half hour of Zumba for a total burn of 700 calories! Love that! Many of you ask how I know what I burn in class and I use my handy dandy Polar F7 Heart Monitor! It’s a wise investment if you are serious in changing your life for good. When you see the calories just burning and burning it makes you work harder and when you see that your heart rate is in the fat burning zone….well let’s just say I kick it in to high gear and go B@ll$to tha wall LOL. You can find a heart monitor priced to fit any budget! Check REI, eBay, Craigslist etc. I even heard Kohls has some! Again mine is a Polar F7.

It was a good thing I burned off all of those calories because we headed out to Shark on Thayer st. for sushi and cocktails to celebrate our good friend Jay’s birthday! It was so amazing! Great food, good drinks, and wonderful friends-just what I needed! Check out some of our yummies!

On to our Pledge 20 Section! It’s Day 18 of our Pledge! Tonight’s topic is going to be breakfast! I have collected some really tasty recipes for all of you! Enjoy!

Sugarless Waffles:

-2 Organic eggs

-2 cups Light Soy Milk, I use Vanilla flavored

-2 tsp Vanilla Extract

-2 cups Wheat Flour, or whatever you use to bake with-it’s your preference

-3 tsp Baking Powder

-1/2 tsp salt

Beat eggs, milk, and vanilla together. Combine remaining goodies and stir into batter, just until smooth. DO NOT over mix, remember they’re pancakes so some lumps are OK. Heat non-stick skillet or griddle to medium high-ish heat and spray with butter flavored cooking spray. Ladle pancakes onto cooking surface or into skillet and allow to cook until top of pancake is very bubbly, then flip and cook until pancake is golden and moves easily with out oozing.

Fruit Glaze-TOPPING-YUM-O:

-2 frozen packages Strawberries

-2 frozen packages Blueberries

-2 bananas, sliced-not to thick and not to thin give them a rough slice

Remember for the frozen packages I use the Target Market Pantry brand individual pouches of strawberries and blueberries.

Heat non-stick skillet coated with cooking spray to medium high heat, pour all fruit into skillet and constantly stir until bubbling. Heat all of the fruit until no longer frozen and it becomes glazed over.

Plate pancake and add a spoonful of fruit glaze to the top, and try not to stuff your face LOL :).

Egg white omelet-cheese, bacon, bits, green onions 1/4 cup egg whites ( I use the Egg Beaters All Whites)

Girl Gone Healthy Apple Walnut Muffins:

1 1/2 c. STEVIA or Splenda
1 c. I Can’t Believe It’s Not Butter Baking Sticks-softened
3/4 c Egg Beaters Just Whites
2 c. No Sugar Added Applesauce
1 1/2 c. chopped walnuts
1 1/2 c. wheat flour
1 1/2 tsp. baking soda
1 1/2 tsp. all spice
1 1/2 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
Measure all ingredients in a big mixing bowl. Beat together well for 5 minutes. Pour into cupcake pans (fill more than 1/2 full). Bake at 400 degrees for 18 minutes.
Perfect for BRUNCH: ZUCHINNI MARSCAPONE MUFFINS:

I’ll show you the food porn before we even get to the goodie list! Please refrain from licking your monitors and if you do, please wipe it down so you can read the goodie list!!!

Here we go:

-2 1/2 cups Spelt Flour (you can use wheat, or white un-bleached, whatever fits your budget and lifestyle)

-2 1/2 cups Organic Brown Sugar

-1 tsp Sea Salt

-1 1/2 tsp Baking Soda

-1 tsp Baking Powder

-2 1/2 tsp Cinnamon ( I LOVE cinnamon so I probably used more than that!)

-2 tsp Vanilla Extract

-3 medium sized Zuccs finely chopped, should be about 2 1/2 cups

HERE’S THE KICKER!!! NO EGGS NO OIL……3 6oz cups Coconut Yogurt Vanilla Flavor take their place!!!!

Combine all WET goodies in large bowl and mix together well, add Zucc and continue to mix, add in brown sugar, continue to mix, add in flour and mix thoroughly. (Hint: if you feel the batter is way to thick, my first try was, add in 1/4 cup or less of Light Soy Milk until batter thins a touch and is creamy)

Using an ice cream scooper, scoop batter into muffin or cup cake molds. Bake 35 minutes in 350 pre-heated oven!!

Makes 24 muffins

ICING…..yes ICING!! These are FABU with out, but for my GGH’ers who love a sweet treat here ya go!

-1 8oz tub Marscapone cheese

-2 cups Organic Brown Sugar

-1 16 oz bag of finely chopped Walnuts

-1 4 oz stick Earth Balance Vegan Butter

– 2 tsp Vanilla Extract

Butter and Mascarpone need to be room temp!!! Once chill is off, combine Mascarpone and butter and mix until blended. Add Vanilla, Brown Sugar and Walnuts continue to stir until well mixed and smooth. Layer a spoonful on each cup cake, and place in fridge for about 10 minutes before serving. Icing sets up and is AMAZING!!!!!!!! YUM-O

Pumpkin Muffins:

1 1/2 c. STEVIA
1 c. coconut oil or 1 c. I Can’t Believe It’s Not Butter Baking Sticks-softened

15 oz can organic pumpkin pie mix
1 1/2 c. wheat flour
1 1/2 tsp. soda
1 1/2 tsp. all spice
1 1/2 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
Measure all ingredients in a big mixing bowl. Beat together well for 5 minutes. Pour into cupcake pans (fill more than 1/2 full). Bake at 400 degrees for 18 minutes.

1/3 c. rolled oats, 1/2 c. water, 1 scoop choc. protein powder. Microwave 2 min. on high. Then stir in 1 T. natural peanut butter and top with skim milk.
