After my interview I was on such a high…..it felt so good to share Girl Gone Healthy with Lisa and her audience. But my high faded when I remembered that I missed Spin at Fit World with Lea, my love! So I strapped on the running shoes, powered up my dance/running mix on the iPhone and hit the neighborhood for a run. It was C-O-L-D out there today. I will be hitting Fit World tomorrow morning with the hubby for a serious cardio burn on my part and chest/triceps on his part. Hopefully, we can meet somewhere in the middle so I can get my SHRED on! I seriously love lifting weights. It feels so good to actually see yourself becoming more powerful. I just want to take a minute and Thank my friends at Stevia In The Raw and my new friends at Good Belly! I received an amazing package from Stevia In The Raw yesterday afternoon, and couldn’t have come at a better time. I was in the middle of writing, and really stressing until I saw the mail man walk up with a HUGE white box! I sprinted to the door, and was pleasantly surprised!

So as I said earlier today was grocery shopping day! For most people that’s a day they despise but not me! I adore grocery shopping day!

We hit Target for the paper goods and Zachary’s supplies, and then off to my happy place….WHOLE FOODS!

I seriously love that place. The produce is fresh, the store is clean, and it’s even a pleasure checking out! Shout out to my lovely cashier and adorable “sack” girl! We stocked up on tons of fresh veggies, apples, chicken, bison, pitas, cheese, hummus and MORE! So relaxing to know my fridge is stocked with yummies.

With fresh whole wheat pitas and yummy shredded cheddar cheese there was only one thing to make for dinner…..Trader Joe’s Chile Lime Chicken Burger Patties! We haven’t had these in sooooo long and I had a box floating in the freezer, so I cooked them up!

How about a delish and fiber filled snack to put out for your guests to munch!

Spicy Peanuts and Pumpkin Seeds by Rick Bayless:

You Will Need
2 cups unsalted roasted peanuts
2 tablespoons fresh lime juice
2 teaspoons ancho or guajillo chili powder, plus arbol chili powder if you like it spicy
1 teaspoon salt
1 cup hulled pumpkin seeds

What to Do
1. Toss peanuts with lime juice until all are moistened. Sprinkle with chili powder; toss until nuts are evenly coated. Spread nuts in a shallow layer on baking sheet; bake at 250?F until chili powder forms a light crust on nuts, 20 to 30 minutes. Remove from oven; sprinkle generously with salt.

2. In large skillet over medium heat, toast pumpkin seeds. When one pops stir constantly until all have popped from flat to round, about 5 minutes. Toss with peanuts, then scoop into a serving bowl.

Makes 3 cups

Sounds like a tasty snack year round!

    Well-written. Thanks. I have been learning a lot about low-fat cooking lately. There are a lot of creative recipes using rice out there, the trick is finding one that really brings out the flavor of the rice you are using. Visit my blog if you’d like to read more.
