“Healthy” Comfort Food

Hey there!

Let’s just dive in! As you may know I’m originally from Texas! When you think Texas you think FOOD, good food, fried food, food guaranteed to clog your arteries LOL. I grew up eating the most wonderful BBQ, Tex Mex Mexican food, and of course the Mother of all wonders in the South, Chicken Fried Steak. I absolutely adore Chicken Fried Steak and it’s probably the only food I miss now that I eat healthy. I decided today that if Chicken Parm and lasagna can be made healthy so can Chicken Fried Steak, and it is GOOD!

Goodies:

-6 4oz pieces Skirt Steak

-1 c Soy Milk

-3/4 c Egg Whites

-3 c Panko Bread Crumbs

-1 tsp sea salt

-1 tsp black pepper

-2 tsp Parsley

-2 tsp Basil

In large bowl combine soy milk and egg whites whisking together until frothy. In separate bowl combine bread crumbs, salt, pepper, parsley, and basil-run your fingers through the mix to make sure all of the seasonings combine. Take each piece of steak and dip it into the egg/soy was, then dredge it lightly thru the breadcrumb seasoning mixture.

Once each piece is coated, spray large skillet with I Can’t Believe It’s Not Butter and place steak into skillet allowing to cook and become golden on each side.

Once steak is cooked thru and golden, plate up and serve!

I enjoyed my piece with a mixed green salad with Balsamic drizzled on top!

Here’s the nutrional run down between MY Chicken Fried Steak and traditional Chicken Fried Steak.

GGH Steak-

-310 cals

-11.2 grams of fat

-21 carbs

342 total intake

Traditional Chicken Fried Steak-

-535 cals

-37 grams of fat

-31 carbs

603 total intake

That’s a difference 260.8 cals,fat,and carbs! While this certainly isn’t an everyday meal I think it’s a pretty good “cheat” meal or special occassion meal. And YES we all need to indulge every once in a while. Besides enjoying just 1 piece with a salad is a far cry from how I used to eat it. I used to eat 3 or 4 pieces, side of butter loaded mashed potatoes, crewam gravy over everything, and either butter rolls or cornbread. So I feel pretty good about my small comfort indulgence.
