Tonight’s post is going to be all about me…..

I know you’re probably thinking that every post is about me, but today is actually a very special day for me. Today marks the 1 year anniversary of when I decided that enough was enough and my life was going to change. For any new readers that are stumbling upon this site, this post, and need to see someone who was in your position, this post is for you. If you have already clicked on the My Mission tab and read my story, I do apologize, but for any that haven’t I want to share that with you today.

Let me take you back to December 23, 2008, that’s where MY mission began.

My then 9 month old son was up all night long with a tummy ache, and as I heard him cry “mama” through the monitor I knew he needed me.  As I went to get out of bed I felt like a metric ton weight was pushing me back and when my feet hit the floor I couldn’t even stand up without horrible pain. My first thought was “I must be really tired”, my second thought was ” enough is enough, I can’t live this way anymore”.  I couldn’t even make it down the hall to my son with out being in pain. I’m 5’2″ and I was way, way, way overweight for my height. While I’m not nearly done with my mission I can boldly state that I’m down 100 pounds (as of Novemebr 2009) and 30 pounds away from my initial goal.  And guess what?! I did it on my own! No fad diets, no pills, no surgeries, no personal trainer and nutritionist, just sheer will and determination to stop living an unhealthy lifestyle. I knew that I never wanted to feel like I couldn’t get to my son. I knew that I never wanted to be the “fat” mom dropping off cupcakes to his Kindergarten class one day, and have all of the kids wonder how many I consumed on the way to the school. I knew I needed to do something and I wasn’t going to do it alone. I’ll be honest, I had tried millions of times to lose weight and become healthy all just to lose a few pounds here and there only to gain back more each time. YOU have to WANT this! And friends, you have to want it for YOU. While I wanted to do this for my son and husband, to be the mom and wife I knew I could be, deep down I really wanted it for ME. I wanted to be the girl I knew was hiding somewhere inside of me.

Fast forward to June 2009:

I’m working out EVERYDAY in some way, shape, or form. I have completely changed the way I shop for my family, as well as the way I prepare meals. We haven’t given ourselves any sort of “foodie or lifestyle” label, I do eat meat. I enjoy a well prepared steak, but I also love the taste of a Bison burger. We are not strictly Vegan, Organic, or Vegetarian we dabble in all of it. We have learned to love new foods; foods that fill us up and give us energy. I didn’t realize the “impact” (I use that term lightly) we were having on people until our friends began asking us what diet pills we were taking. They couldn’t believe we had lost that much weight, my husband is down about 60 pounds, and have this much energy without taking a pill. I’m here to tell you friends, there have NEVER been any pills, nor will there ever be any pills. EVER!

My hope for this “journal” is that it can become a meeting place for people in all levels of their healthy journey to congregate. I want this to be a place where you can feel “safe” and not judged, but supported and cheered on. I’m not certified in any thing, I didn’t attend culinary school. I’m just a REAL girl with REAL struggles, struggles I have had all of my life. I have found ways to conquer those struggles and I want to share them with you, as well as have you share your tips and tricks with me.

Present day, December 23, 2009…..100 pounds lighter 20 more to go and I can’t believe I did this! YOU reading this right now can do this. You are worth it and don’t let the Christmas holiday and New Years holiday be your excuse. This starts NOW! Make the choice to change your life for the better. Clean out those cabinets and be free from the sluggish, overly tired feelings! For anyone saying YES I’m going to do this, don’t just say it DO IT!!! It’s a proven fact that Holiday eating comes from emotion. Don’t let emotion, stress, lack of sleep and everything else continue to rule your life. Make a promise to yourself that this time next year you will be able to wear those hot black slacks, cute little belted sweater and hot heels and look as good as you feel on the inside! So…..on to more fun stuff! Zachary and I mad homemade sugar cookies for the first time! And we decorated them! And then we ate 2 and threw them out LOL!

They were tasty and his fingers were all red and sprinkly. I also experimented with a new appetizer! They could be considered a won ton of sorts and while they are super duper yummy you can’t over indulge! The bread will get ya! I have to share the recipe though, just for those of you who are already at goal weight or can eat an entire buffet and not gain a pound!

Cream Cheese and Chive Won tons:

-1 can reduced fat Pillsbury Crescent rolls

-4 tablespoons softened cream cheese

-chopped green onion, I’d say grab like 4 sticks and chop them into small pieces

-1 tablespoon bacon bits

-1/4 cup Italian blend shredded cheese

Mix cream cheese, bacon bits, and onion together making sure that everything is combined. Unroll crescents spreading them out on your work space. Use your fingers and push the perforated lines together allowing the triangles to become large squares. Next, cut off small squares and place the dough into a well greased min muffin pan. It’s ok if some of the dough is hanging out of the muffin cup. Last, spoon small amounts of the cream cheese mix into each dough cup, top with a sprinkling of Italian cheese. Place into pre-heated 350 oven for 10 to 13 minutes, or until golden brown. Serve hot!

I had left over cream cheese mix so I smeared it on to a wheat tortilla, rolled up the tortilla, cut it on an angle and made pin wheels! Healthy alternative!

Yummmmmmmyyyyy!!!!

So now I have to go finish up a gift basket for my lovely Auntie Pauline to give to her daughter…..an elves work is never done!
