So earlier on Twitter I was chatting about the Girls Night In we are planning for this Friday night (tomorrow) and it turns out lot’s of you are planning the same sort of evening! So I thought I’d give you a few of my fave Healthy cocktail party snacks! Hope they can be helpful to you and your Ladies Night!
Champagne: At 100 calories a flute, you can have a classy drink without feeling guilty.
Wine Spritzer: Wine spritzers are half wine and half club soda. With three ounces of wine and three ounces of club soda, wine spritzers top out at about 60 calories and zero grams of fat.
Red Wine: Opt for red and you’ll get a healthy dose of disease-fighting flavonols and age-defying reservatrol too. A glass of wine typically weighs in at 100 calories.
Beer: Light or regular, a bottle of beer is a much better option than most cocktails. The drink has a bad reputation associated with the “beer belly.” But the calories in beer versus a martini might shock the most diligent dieter. Regular beer has 150 calories to the bottle, while light has about 100. Or my fave MGD 64! 64 calories and all of the taste!
Vodka (or Gin) & Soda: Sparkly mixers — like gin and tonic or a vodka cooler — can keep you light and fun at the same time. Most mixers with 1.5 ounces of 80-proof spirits and diet tonic or club soda have less than 100 calories and no fat. Top this refreshing drink with a wedge of lime or fruit.
For a seasonal treat my go to is PUMPKIN!!!
Girl Gone Healthy Pumpkin Muffins:
1 c. I Can’t Believe It’s Not Butter Baking Sticks-softened
3/4 c Egg Beaters Just Whites
15 oz can organic pumpkin pie mix
1 1/2 c. wheat flour
1 1/2 tsp. soda
1 1/2 tsp. all spice
1 1/2 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
1 stick butter, melted ( I use the I Can’t Believe It’s Not Butter sticks for baking)
1/2-1 c. chopped pecans
1 c. instant fat free vanilla pudding powder (you’ll need 2 boxes to measure out 1 cup)
1 (8 oz.) pkg. fat free cream cheese
1 (3 oz.) pkg. instant fat free chocolate pudding
1 (3 oz.) pkg. instant fat free French vanilla pudding
Mix ingredients for crust together and spread into a 9 1/2 x 13 inch pan. Bake 20 minutes at 350 degrees. Cool. -Make sure to cool!!
In a bowl, mix 1 cup Cool Whip, 1 cup vanilla pudding powder and cream cheese; spread over cool crust. Mix chocolate and French Vanilla pudding mixes in separate bowls according to package directions allow puddings to set for a few minutes. Carefully spread the chocolate pudding over the cream cheese layer, next carefully spread the French vanilla pudding over the top of the chocolate trying not to swirl them together. Lastly, top everything off with remaining Cool Whip. (GGH Note- when making your puddings use Skim Milk. Also making this the night before and allowing to sit in fridge over night makes it taste 10 times better!)
Black Bean Dip
Combine black beans, salsa, lime juice, cilantro and cumin in a food processor. Process until smooth. Season with salt and pepper. Serve with veggies, pita chips, or baked tortilla chips!
Mozza Veggie Skewers
