I’m so sorry I couldn’t post these last night but my head was so filled with pressure I thought I was going to explode. I made a nice big cup of tea and crawled in bed covered in menthol rub!
Anyway, yesterday was one of those days where I felt like re-creating something I love to order when dining out. I adore the lettuce wraps from PF Changs but I don’t adore how puffy they make me the next day. So here’s my spin on lettuce wraps!
-1 1/2 cups chicken (sliced or diced is fine)
-1/4 cup onion and pepper mix (I use the frozen pre mixed)
-1 tablespoon minced garlic
-1/2 tablespoon ginger (I used powder as I didn’t have any fresh to grate)
-2 large lettuce leaves (I used ice berg)
In a large non stick skillet saute your garlic and onion/pepper mix until soft. Add in chicken and cook until done. Sprinkle everything with the ginger and mix well, feel free to add some lemon or lime juice. Set chicken aside to cool for a bit and wash your lettuce leaves. Be sure to path them dry with a paper towel, they are delicate. Spoon your chicken mixture into the lettuce wraps until desired fullness is reached.
To make the butternut squash with cinnamon (pictured in the ramekin) simply steam diced butternut squash and mix with cinnamon. You can even use the frozen steam in bag squash!!
