Happy Saturday To Ya!

I hope that everyone is having a spectacular weekend thus far. I would just like to take a moment to say Thank You to everyone who reached out to GGH after yesterday’s post regarding my Father in Law. It means so much, we have a long road ahead and the support is so greatly appreciated. I passed along the overwhelming flood of emails to my Mother in Law, and she send her gratitude to all of you as well.

Soooo….a couple of posts back I mentioned that I was thinking of joining a gym. I have to admit that I was a bit nervous to go work out in front of a “crowd”, but I got over it this morning. I went for a guest work out at Fit World in Cranston. LOVE it!!! I loved being in that atmosphere, my work out flew by because I’m nosy and I enjoy watching other people :). Tanning is available and I tried that out too, and it was the same tanning booths that I pay $65 for 18 visits….this is only $5 a month UNLIMITED! If I want to tan twice a day, OBVIOUSLY not a good idea, I could!! The gym is in transition, they are moving into a completely new building with hard core classes, new equipment, juice bar, personal trainers, and child care…..YES to all of the above. I’m super excited! The new location will be up and running by the end of summer, but I was just fine with what they had available. I did the elliptical….MONUMENTAL friends. I have always wanted to try the elliptical and I blamed it on my “bad” knee. I really do have a bum knee but with 80 pounds off of it I was able to fulfill my dream. My drive is 100% back! I feel like I did after I was able to run on the treadmill for the first time. I didn’t want to leave the gym! I wanted to try every machine and touch every weight. I was sad that I had missed the yoga class they had going this morning, but I pumped to try the classes this next week! The price is great too, so check them out: www.fitworldri.com

So let’s talk about some food!! Last night for dinner I whipped up some roasted eggplant…..YUM-O! I love roasting veggies to munch all weekend long because Ryan works and I hate cooking for just me. I have included the goodie list for you below!

I used:

-2 large eggplants (from Whole Food’s grown right here in RI! Yay for helping the local farmers)

-Olive Oil

-Italian Seasoning & Rosemary (both dried)

Method:

Pre-heat oven to 400, while heating give the eggplant a rough chop, coat large roasting pan with olive oil, and add eggplant chunks, sprinkle seasonings all over to taste, drizzle olive oil across the top, place in heated oven for 35 minutes. DELISH!!!!!!

Here it is out of the oven! When I plate it I love a sprinkle of Parmesan cheese!!

YUMMY, and I have enough left over for lunch this afternoon and dinner tonight! Gotta love that.

For the afternoon I’m not sure what adventures Zachary and I will embark upon. It’s warm but it’s wickedly overcast.

I’m sure we will find something though! I shall leave you now to go do some quick crunches on the ball, shower up, and enjoy some eggplant for lunch! I will be back tonight with an update on my FIL as well as any fun sightings from the afternoon. Thank you all again for the support!
