This post is full of FOOD! I’ve got comfort food workin this week and I even have a fiber-licious dessert that will shock and amaze you!

There’s a lot so let’s go!

Italian Stir Fry:

This dish was inspired by awesome squash plant and a package of chicken that needed to be used! My hubby loves breaded chicken and since he’s a guy…..he CAN eat it! I on the other hand just wanted to use my 1st ever zucchini that I harvested!

Exciting right?!

So this is a clean out the fridge sort of meal. I simply breaded chicken cutlets and baked them at 350 with an EVOO drizzle for about 35 minutes. In a large skillet I sauteed my zucchini, 2 cups frozen red/yellow/green peppers, 1 small carton of mushrooms, and 1/2 cup diced white onion. I topped my veggies with a generous palm full of Herbs De Provence. Which is a mix of thyme, basil, tarragon, and lavender. Saute veggies until soft. And either plate with chicken OR create a yummy wrap!

The hubby was loving this as a snack! Simply grab a whole wheat wrap, 2 slices of rice cheese and left over stir fry. Roll up and enjoy!

Now we are going to go on a black bean frenzy!!!!! I’m absolutely in love with black beans and the other day I randomly spotted a can of re-fried black beans….AWESOME!!!! We had some friends over the other day so I whipped up…..

Black Bean Quesadillas:

Goodies:

-1 package Morning Star Farms Sausage Crumbles

-1 cup diced green onions

-Jalapenos (optional)

-1 can re-fried black beans

-shredded cheese ( I used cheddar rice cheese)

-whole wheat or multi grain tortillas

In large skillet cook up crumbles and onions until warmed and soft. In microwave safe bowl heat beans until they stir easily. Place one tortilla on flat work surface, spread beans onto tortilla, top with hearty spoonful crumble/onion mix, jalapenos and cheese. Place another tortilla on top and either “fry” in skillet or use a quesadilla press to melt cheese and create a nice crunchy crust on the tortilla! Slice into 4ths and enjoy hot!

For dessert I felt like we should keep the black beans comin’!

Black Bean Brownies:

This recipe is SUPER simple…..ready?!!!!

-1 package low fat brownie mix

-1 15 oz can black beans (whole, rinsed well)

-1/4 cup water or more for not so fudgey

-can also add carob chips

In food processor or blender combine water and rinsed beans, pulse until pureed and smooth. Combine bean puree with brownie mix and stir well. In well greased 8×8 pan pour brownies and spread. Bake in pre heated 350 oven for 30 to 35 minutes. They tasted just like FUDGE!!!!

Packed full of protein and fiber!!!!! Your family will never know!
