Don’t Slack

With temperatures slowly starting to cool and coffee shops like Starbucks tempting us with their Pumpkin Lattes and Coffees, Fall is just around the corner.

Fall doesn’t just bring beautiful colors, cooler temps, and yummy savory foods it can also bring LAZINESS!!! Yes being lazy is so easy in the Fall. Think about it, it’s Sunday afternoon there’s a wonderful breeze, you can smell Autumn the air and you have no where to be so you decide to nap after that rather large bowl of soup or chili. Doesn’t sound like a bad Sunday, but one “Sunday” leads to another and another and then suddenly it’s happening on Tuesday and Wednesday!! We almost make it OK to be lazy to because there’s no pressure of a bathing suit or little sun dresses…..wrong there is pressure it’s just in the form of skinny jeans, tailored pants, chubky sweaters and BELTS!!!

Don’t let your weight creep back on or allow yourself to slack in starting your weight loss journey thinking you can hide behind sweaters, hoodies etc….keep that regimine! After all New Year’s is always a time when you want to sparkle and Spring will come right back around!

You’ll need some really yummy food to keep you on track and I have a great new stuffed pepper recipe and a flour less peanut butter cookie recipe for you!!

Fire Roasted Chicken Stuffed Peppers:

– 2 to 3 boneless chicken breasts diced

-3 medium sized red peppers

-1 15 oz can fire roasted tomatoes (run through your food processor to puree)

-large pinch of red pepper flake

-pinch of sea salt and pepper

-handful of fresh chopped cilantro

In a large satuee pan cook your chicken until golden, add in seasonings and tomato puree and mix, turn heat down and allow to simmer. In a large pot boil water and and red peppers to pot, allow peppers to boil until nice and soft.

Remove peppers from water and spoon in chicken mixture, place in a small baking pan and pop into pre heated 350 oven to warm everything through, about 5 minutes.

Flourless Peanut Butter Cookies

 -1 cup of chunky peanut butter (soften in the microwave about 30 seconds)

-1 cup of splenda or organic raw sugar

-1 large egg

-1 tsp of vanilla extract

In a mixing bowl combine everything but pb and mix using your mixer, everything will be a gorgeous yellow and creamy. Add in pb and continue to mix until nice and thick. Spoon onto baking sheet and place in pre heated 375 oven for around 10 minutes or until cookies are golden and firm on the outside.

Allow to cool and devour
