Day 54-The Winner Is…..

Friday!!!

Here in Rhode Island I’m gonna call it FREEZING FRIDAY! It was snowing this morning…..ummmm no Thank You! It’s October Mother Nature and I despise snow. While it didn’t stick, it still disgusted me to see it mixed in with the rain.

Anyhow……

So today was the drawing for our FREE goodie box from Stevia In The Raw! For those of you who did participate I thank you, and your ideas were all super amazing. I did draw a name randomly from my pumpkin and I have pictures below to show you the drawing in progress!

All of the entries were so yummy, and I couldn’t choose one. Below are all of the recipes that were entered, and then I have a special surprise for you all!

Flourless PB Cookies by our winner Mabelle

1cup crunchy or smooth PB (I prefer crunchy)

20 packets of Stevia in the Raw

1 egg

1 tsp vanilla

Preheat oven to 350 degrees. Combine ALL ingredients (Do not overmix), Shape into 1 inch balls. Place 2 inches apart. Flatten cookies with back of fork doing a criss-cross pattern. Bake on greased cookie sheet for 8-10 minutes. Enjoy!!

No Bake COOKIES by Lisa (AZN8IV)

2 cups Stevia

1/2 c. milk

1/2 c. butter

3 T. unsweetened cocoa powder

Mix the above ingredients together in large sauce pan, bring to a boil for a minute. Remove from heat and stir in quickly:

1/2 c. peanut butter

1 t. vanilla

3 c. old-fashioned oats

Spoon onto cookie sheet and let cool!

Chocolate Covered Strawberries by Elizabeth Miller (a.k.a. jordansVA_lover)
Serving Size: 2 Tbsp.• Total Servings: approx. 8 (Makes about 1 cup sauce)

1-cup (8 oz.) chocolate chips (preferably Ghirardelli)
¼ cup 2% milk
3/8 tsp. stevia extract
¼ tsp. vanilla extract
In a 2-cup measuring cup, mix chips and milk. Microwave on high for 1 minute. Stir until chips are melted and mixture becomes smooth (you may have to microwave an additional 15 to 20 seconds).
Stir in stevia and vanilla. If small clumps are still present, beat with electric or handheld mixer until completely smooth. Hold the strawberries by the stem and dip them individually in the chocolate sauce and place on wax paper-lined cookie sheet. You can either serve immediately or refrigerate for 1 hour or more and enjoy. You can also use this sauce as a fondue or delicious covering for other fruit, nuts, pound cake or angel food cake. Refrigerate leftover sauce and reheat in microwave.
Cinnamon Sugar Almonds by Elizabeth Crawford (ukgrad1995)
 
Raw Almonds (lay out on foil on baking sheet)
Spray with I can’t believe it’s not butter
Sprinkle Cinnamon and Stevia over all
Bake at 300 degrees for about 20 minutes.
Yummy – great snack without the added fat& calories of the nuts you buy in the store, at the fair, etc.
Vegan Banana Brownies by Nathalie (MissNathVintage)
For the brownies:
4 oz. semi-sweet chocolate, chopped [I just used chocolate chips]
1 cup mashed very ripe banana (about 2 large bananas) [Mine were just a little – okay, WAY – overripe, and they worked fine]
1/3 cup canola oil
1 cup stevia
1 tsp. vanilla extract
¾ cup all-purpose flour
¼ cup cocoa powder
¼ tsp. baking soda
1/8 tsp. salt

For the topping:
1 cup mashed very ripe banana
2 tbsp. stevia
¼ cup soy milk
½ tsp. vanilla extract
1 tbsp. arrowroot powder

For decoration:
Yet another ripe banana
[& I threw on some chocolate chips.]
Preheat oven to 350?F. Lightly grease a 9×13” baking pan.
To make the brownie batter:
Melt the chocolate, preferably by placing a pan or heat-proof mixing bowl over a small pot of boiling water. [I was far too lazy for this method and just threw my chocolate chips in a pot and stirred constantly to make sure it didn’t burn.] Then remove from heat and set aside to cool.
In a large mixing bowl, combine the banana, oil, and sugar. Use a handheld mixer to beat everything together for about a minute. (If you don’t have a mixer, use a strong fork and mix for about 3 minutes.) Mix in the vanilla and melted chocolate.
In a separate bowl, sift together the remaining ingredients. Add this to the banana mixture in batches, mixing it with the hand mixer as you go along. Mix for about a minute more.
For the banana topping:
In a small bowl, combine all topping ingredients and mix with the hand mixer –(don’t forget to wipe the beaters off first)—for about a minute.
Spread the brownie batter evenly into the baking pan. Pour the banana topping over that and spread evenly. Bake for 30 minutes. Remove from oven and let cool. [At this point, I decided it would be yummy – and pretty looking – to melt some chocolate chips on top.] After about 15 minutes, move to the fridge until fully cooled. Cut into 12 squares, place a few slices of banana on top, and consume.

Pumpkin Apple Harvest Cake By Amy K (vandallbanshee)
1 cup cooked or canned pumpkin puree
2 large eggs, beaten
3/4 cup stevia
3/4 cup unbleached all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon ground ginger
1/2 teaspoon salt
1/2 cup chopped apple
1/2 cup chopped walnuts or pecans
Whipped cream or confectioners’ sugar for topping (optional)

1. Preheat oven to 325F. Prepare an 8-inch round cake pan by greasing and flouring it.
2. Combine pumpkin, eggs, and stevia in a large mixing bowl. Add flour, cinnamon, baking powder, ginger, and salt, stirring to combine. Add apples and nuts, stirring again. Pour mixture into prepared pan.
3. Bake 20 to 25 minutes, until a cake tester inserted in the middle comes out clean.
4. Cool the cake, still in the pan, on a wire rack for 10 minutes, then invert the cake onto the rack, remove pan, and cool cake completely.
5. When ready to serve, turn cake on to a pretty plate and top with whipped cream or confectioners’ sugar, if desired, or serve plain.
