Hello Friends!

I am super content right now! I had a great run, while I only did a mile I ran like my hiney was on fire :).

We hit up Trader Joe’s to re-stock goodies, and those of you who have been following me for a while know what I had for dinner now!!!! Yep you guessed it my latest OBSESSION Chile Lime Chicken Burger Patties. DELISH! I love to cook it up and then cube it and toss it over fresh shredded spinach. I also added in a half of a sliced avocado, and two small roma tomoatos. I gave it a couple of sprays with the trusty Wish Bone Asian Sptrizer and a sprinkle of 2% mexican cheese. YUM-O as Rachel Ray would say. Ryan loves his patty on an organic pita with sliced avocado on each 1/2 of the pita and he pairs it with blue corn and flax seed tortilla chips…..YUM-O.

This post is going to be a little short this evening so that I can spend some FACE time with the hubby. I’m thinking I want to watch a movie, something mindless though…..I’m tired!

I promised you a RIDICULOUS Zuchinni Cake Recipe and I will deliver. This is from a GGH special, favorite friend! I have known Kelly for about a gazillion years and she takes AMAZING care of her family. This little sweet treat is great for special occassions, birthdays, or like a random Wednesday LOL. I love it and feel free to tweak it according to your eating style. Sub the eggs for yogurt to Vegan-ize it, or use all Organic flours and sugars to Organic-ize it, or just eat it like we do STRAIGHT UP!!! Cake
– 3 cups flour
– 3 cups white sugar
– 1 tsp salt
– 1 1/2 tsp baking soda
– 1 tsp baking powder
– 2 1/2 tsp ground cinnamon
– 1 tsp vanilla extract
– 4 eggs
– 1 1/2 cups veg oil
-3 cups grated zucchini

Icing
1 (8 oz) pkg cream cheese
1/2 cup butter
2 cups powdered sugar
2 tsp vanilla extract

Cake:
Preheat oven to 325. Grease 3 -9 inch round pans. In medium bowl combine: flour, baking soda, baking powder, cinnamon, white sugar and salt. Mix Well. In seperate bowl beat eggs, veg oil and 1 tsp vanilla together. Pour egg mixture into flour mixture and mix well. Stir in shredded zucchini and continue to mix vigorously. Bake for 25 mins

Icing:
Cream together cream cheese and butter. Add the powdered suger a little at a time. Add 2 tsp vanilla and mix well. Spread on cake and enjoy!!
